Organic mashed butternut squash. I diced it up and tossed it with some @traderjoes Chili Onion Crunch, cinnamon, cloves & nutmeg. Baked at 350 degrees for about 45 minutes. Mashed with @organicvalley 1/2&1/2 & @traderjoes 💯 Vermont pure Maple syrup. Two different meals are pictured, but both include organic Beef/Bison Meatloaf, made with @claytonsorganicbeef & @greatrangebrand bison. The meatloaf is based on @testkitchen recipe for Meatloaf with Brown Sugar Glaze, but instead of ketchup and brown sugar for the glaze I used my homemade Organic Chili Sauce, based on @marthadixoncopperkettlecookbook recipe for blender catsup & honey. Also in the meatloaf @fage Greek yogurt & Organic free range eggs from @dowkerfarm. Organic Basmati rice cooked in my homemade organic chicken broth. @traderjoes organic sweet corn. Everybody loves meatloaf! Made with @claytonsorganicbeef and @greatrangebrand bison. Based on @testkitchen recipe for meatloaf with brown sugar ketchup glaze, except I didn't use ketchup or brown sugar for the glaze! Instead I used my organic homemade chili sauce, also known as blender catsup in Martha Dixon's Copper Kettle Cookbook and honey. Made with @fage Greek yogurt and organic free range eggs from @dowkerfarm. Served with organic Basmati rice cooked in my homemade organic chicken broth, and @traderjoes organic sweet corn. Major comfort food! The husband ate another hunk of it after the ginormous one from the first pic!

Tonight I cooked from ‘Milk Street Tuesday Nights’ again, and this recipe is another winner for me 🌟 The pasta-sauce was everything I needed it to be: creamy due to the ricotta, fresh due to the lemon zest and packed with the flavors of sage and parsley. The toasted walnuts on top gave a nice bite to this dish. I served the pasta with a simple salad of mixed greens and cherry tomatoes. My pasta cravings are satisfied for a (short 😉) while now! .

Olive burgers and butternut squash for dinner! For those of you that are not aware, the olive burger originated in Flint, Michigan in 1923, under the name Kewpee Hotel Hamburgs. The sauce is a mix of pimento stuffed green olives and mayonnaise. This is made with my organic homemade mayonnaise, which was made with organic free range eggs from @dowkerfarm in Lansing, Michigan & Trader Joe's stuffed Queen Sevillano olives. Clayton's organic ground beef, Trader Joe's New Zealand sliced cheddar cheese & organic green leaf lettuce. Served on Whole Foods Brioche hamburger buns. Organic Butternut Squash roasted with melted Aldi's butter, salt, black pepper & Cayenne pepper, based on @testkitchen recipe. Yummy Yummy in my Tummy!

Okay this is not the prettiest picture everrr... at all, haha 🙈 Let’s just say I was very hungry and didn’t have enough patience to take a pretty picture anymore ( #hangry 😜). I had to share this picture anyways, because these burgers tasted a-ma-zing 😍 They were really tender and had lots of flavor to them. And then the sauce... The sauce was creamy, and the combination of the mayo, lime juice and scallions created a really unique flavor that complemented the burgers really well. I can’t help that in some way these burgers reminded me of McDonalds, but in a very good way (which is weird to me because I don’t even like McDonalds haha 🤭). Let’s just say it’s a more sophisticated, higher quality version of McDonalds, made with love!.
I made a few alterations to the recipe. Firstly the recipe called for ground turkey. I couldn’t get my hands on ground turkey, so I chose to use ground chicken instead, which worked perfectly. I also used less ground chicken than the recipe called for (300 grams instead of a pound (=~450 grams)) and adjusted the quantities of the other ingredients accordingly. I still got 4 burgers out of the recipe which to me were the perfect size, so next time I will make the same quantity. The recipe also called for cilantro, which I subbed for parsley, because me and my mum both have the gene that makes cilantro taste like soap 🧼 😢. Lastly I got a little rebellious and skipped the step of refrigerating the burgers for 15 minutes before baking them - even though the recipe emphasizes that the chilling step is important to help holding the patties together during baking (again: little patience because #hangry 😅). Luckily, I had no problems with my burgers falling apart whatsoever, so I think I will skip this step again the next time I make this burgers. And yes, there definitely will be a next time. All of my family members loved the burgers, and one bite of them made me forget all of my ‘hangry-ness’. All’s well that ends well 😊.

I used thigh meat, organic radishes, organic scallions, & organic carrots, Trader Joe's Organic spicy taco sauce, La Victoria green taco sauce, Trader Jose's Mexican Blend cheese, &El Milagro corn tortillas. Yummy!

One of my favorite reviews of The Palestinian Table to date by Christopher Kimball for Milk Street Magazine. Spot on, witty, and gets to the heart of the book. "Neither a history lesson nor an exercise in anthropological preservation, the book's appeal is found in the simplicity of cooking. It's like visiting Palestine and understanding every word on the street without an interpreter...Kassis makes you feel as if she lives around the corner, and you hope she invites you for dinner. If you don't get a call, however, you can just buy her book." 😂 .

Most recipes are 25 minutes and the rest are an hour or less.
I’ll definitely be sharing photos of my home cooked meals from this cookbook in the near future! 👩🏾🍳♥️
Tonight we had Pistachio-Mint Beef Koftas for dinner with a Tomato-Herb Sumac Salad. Both recipes are from the cookbook Milk Street @177milkstreet by @cpkimball for the #rainydaybitescookbookclub .
We have koftas or keftas regularly and my son was very excited to learn they would be dinner tonight. That is why I used 2 lbs of burger instead of 1 1/2 lbs like the recipe called for. 😉
I didn't use the food processor for the beef mixture, my hands worked just fine and was less clean up. Used fresh mint with the mortor & pestle ground pistachios instead of dried & loved how it worked together when mixed. One egg was enough to bind everything together. Served with warm naan bread, the yogurt sauce and chopped lettuce it was a delicious arrary of flavours and textures. The Tomato-Herb Sumac Salad turned out to be the perfect side dish to this meal!🍅🥗
So many recipes I want to make in this book it's truly fantastic!

Hey guys, I know my food plating sucks and it does not match up to this photo...but this recipe from MILK STREET Tuesday Nights by @cpkimball is EVERYTHING 😍😍😍 Not only is it extremely delicious but this took me 30 minutes!
So I substituted chili pepper for chili flakes because I didn’t have fresh pepper on hand. But the idea to cook the shrimp tails to extract flavor was new to me but I know it added that extra flavor. I’m wondering if I can do this with my curries 💭 🤔 You can find this recipe on page 93.
Thanks to @littlebrown for gifting me this awesome cookbook! This is about the eighth recipe I’ve tried and I’ve been loving them all....What are you cooking this Tuesday night?
