I had some super awesome Halloween macaron ideas, but sadly since we moved into the new house 🏠 I have not been able to get my macarons to turn out quite right 😢. I have tried everything I can think of, different pans ❌, different temps and baking times ❌, different baking mats ❌. So far no luck. I'm struggling to figure out what is different about this oven compared to the old apartment one I learned one 😵. Its a little stressful. I am still going to try to get some of the Halloween ideas done, but they won't be at pretty (or level) as I'd like.

One of last weekend's birthday cakes. The client wanted minimal design so I kept things simple with just a bit of neutral-colored "bling". Burnt-sugar cake from Colonial-era New England, topped with vanilla buttercream - tastes like the syrup that comes with flan! Yum!

After weeks of planning , estimation , choosing the right flavor to settling up with the right shape and size for the cake and not to forget the cake nightmares of me messing up the entire cake (Yes, that's true) I was successfully able to make this Amazon Delivery Box cake for my sister's birthday. It may not be perfect and I still have to ace up my icing game but apart from that the birthday girl @little_sweet_foodie was over the moon to have this cake and that made every effort worth it.
This is the only Amazon delivery box that is completely edible including the address page and the tape on the side 😁😁 @little_sweet_foodie

I think I’m going to need a bigger fridge... Round 1, fill and crumb coat. Round 2, ice. Round 3, cover in fondant. Round 4, PANIC. 🤣

I’m constantly flipping my cakes. As long as you put enough pressure on the top and bottom boards, the cake isn’t going anywhere. For this cake, it was way easier to trim the shape of the 6 upside down, rather than try to get it exact on top. Depending on what I’m doing, I’ll adjust the seam accordingly. This is a top view cake, so the seam is on the side and not too noticeable once the web lines were added. Decorators, for odd shapes (mainly #s ), do you panel or cover the entire cake with one piece of fondant? 👇
