~ Pouding Chômeur ~
We don’t consistently make & eat dessert after dinner, so when we do it’s super exciting.
Especially one like this: pouding chômeur (“pudding of the unemployed”). It’s a French-Canadien pudding thought to be invented during the Great Depression as a dessert using limited ingredients. Warm, cinnamon-y biscuit baked in a maple-syrup-y caramel and served with vanilla ice cream = PERFECTION for fall.
Google it, make it, love it. So much easier than you’d think. After making this last night I’ll be crafting my own variation.
Apple Pie Caramel Apples.
The best part of these little beauties is the messier the better! They make such a great gift around the holidays and are a great way to get your kids involved (have them unwrap caramels, wash apples, peel stickers and drizzle caramel)! .
▪︎6-8 (depending on size) granny smith apples
▪︎6 popsicle sticks
▪︎3 pkgs of caramels (kraft or werthers)
▪︎2 tbsp milk or water
▪︎1 pkg butter cookies (the kind that remind you of your childhood)
▪︎1/4 c brown sugar
▪︎2 tsp cinnamon
▪︎2 bags ghirardelli white chocolate chips ▪Clean apples and dry completely. Remove stem and add popsicle stick. ▪Unwrap 3 bags of Werther's or kraft chewy caramels. Add 2 tbsp. milk or water and microwave in 30 second intervals until melted. Dip apples and put in refrigerator. ▪Put entire package of butter cookies, brown sugar and cinnamon in bag and crush until pieces are broken into bits. Put on a plate (to roll apples in later) ▪Pour 2 bags of ghirardelli white chocolate chips (don't buy off brand) in a bowl. Microwave in 30 second intervals and stir until melted. ▪Dip caramel apples in chocolate, roll in cookie mixture and drizzle with more chocolate and whatever caramel is left. Make it messy. It's cute. ▪Store in individual bags in the fridge. One apple cut up serves like 6-8 people!

CAKE VENDING MACHINE in Toronto! And it’s not any cake... it’s the famous @carlosbakery, which is all the way from NY and from the Cake Boss show. Everyone is freaking out and lines have been insane. The cakes have been stocked up daily, but sell out by 12pm or so everyday! I was lucky to try both the carrot 🥕 and the rainbow 🌈 flavours!! Swipe to see the vending machine in action hehe !! My verdict?!? The rainbow one is a bit too sweet, but there’s no taste to the sweeteness. On the other hand the carrot cake has little pieces of carrot, is fluffy and the frosting is delicious!! It’s a win win because the rainbow one seems to be the one that always sell out, so I recommend that you go for the carrot one 😉. If you swipe a couple of photos down, you’ll see the carrot cake one hehe 🥰 it’s a 10 dollar slice, but a very generous one! Just make sure you pick a flavour you enjoy! I have also seen the chocolate and the red velvet flavour around 🍰 you can find some of the machines in the path downtown ☺️

Pumpkin Chocolate Chip Cookies – these soft & chewy vegan pumpkin cookies are the perfect fall treat with a hint of pumpkin spice and chocolate in every bite!
They are so darn good! I love how incredibly soft in texture these cookies are. Kinda like a pumpkin “soft-batch” cookie, but even better because these are made from scratch, allergy-friendly, vegan and just as delicious using the gluten-free option. 🎃🍪

crust & crumble-
•1 & 1/2 cups almond flour
•1 cup old fashioned oats
•2 tbsp coconut flour
•1 & 1/2 tsp cinnamon
•1 tsp apple pie spice
•1/3 cup maple syrup
•1/3 cup melted & cooled coconut oil
•2 tbsp peanut butter + 2 tbsp almond butter
•3 & 1/2 cups chopped apple
•1 tbsp coconut flour
•1 tsp apple pie spice
•3 tbsp maple syrup
•preheat oven to 350F & grease an 8x8 baking dish
•combine dry ingredients for the crust & crumble in a medium bowl.
•add wet ingredients to dry & mix well
•press 3/4 of the mixture to the bottom of the baking dish
•bake for 10 minutes
•while the crust is baking, put apple filling ingredients into small saucepan & cook until apples are soft & texture is thick.
•add to top of crust layer & sprinkle remaining crumble mixture on top of apple mixture
•bake for 25 minutes more until golden brown🙀

These are Tahini Maca Fudge Brownies - recipe is @ambitiouskitchen tahini brownies recipe with a few lil tweaks. Homegirl is straight 🔥🔥when it comes to baking: crinkly top, gooey fudge middle, oh baby.
2 @vitalfarms eggs
1/4 cup @thrivemarket maple syrup
1 cup @seedsofcollaboration tahini
1 tbs coconut oil
1/2 cup @bobsredmill coconut sugar
1 teaspoon vanilla extract
1/3 cup @ghirardelli cocoa powder
1 tbs maca powder
1 tbs @bobsredmill coconut flour
1 scoop @ancientnutrition collagen peptides (optional)
1/2 tsp baking soda
pinch of salt
1/2 cup chopped @evolvedchocolate Signature dark chocolate
Chocolate drizzle (optional)
1/4 cup @eatingevolved chocolate
1 tbs coconut oil
Heat oven to 350. Line 8x8 square baking pan with parchment paper.
In a large bowl, combine wet ingredients until well mixed. Fold in dry ingredients - it'll be very sticky. Stir in chocolate chips.
Spread batter evenly in pan. It helps to get a silicon spatula wet and spread the batter flat. Bake for 18-24 minutes or until toothpick comes out with a few wet crumbs. You definitely want a fudge-factor going on, so don't over bake them!
Let brownies cool. Melt together drizzle ingredients, then drizzle all over the brownies. DEVOUR.

You NEEED to make this PALEO PUMPKIN BREAD 🎃it may just be the most fluffy, luscious, basic babe thing I’ve ever made and I am INTO IT. Rivals any coffee shop/Starbucks loaf I’ve ever tasted. I swear. .
This loaf is paleo, grain free, dairy free, oil free, and so dang tasty. You can use any nut butter - I used almond butter, but cashew or peanut would work great. Haven’t tested with any other flours, but feel free to experiment with alternates (just google the ratios!!). .
Paleo Pumpkin Bread
1/2 cup @brandlesslife almond butter
2/3 cup cup pumpkin purée
1/3 cup @thrivemarket maple syrup
1 tsp vanilla extract
1 tsp apple cider vinegar
1 cup @bobsredmill almond flour (packed)
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Pumpkin seeds + pecans for topping (optional) .
Heat oven to 350. Line 8x4 bread tin with parchment paper. Mix together wet ingredients. Add in dry ingredients. Pour into pan. Top with nuts if you’re feeling *extra* like me. Bake for 30-45 minutes or until toothpick comes out clean (baking time will vary by pan and oven). Let cool completely and DEVOUR. Topped mine @brandlesslife peanut butter 🥜❤️

PALEO CHOCOLATE SHEET CAKE 🍰 paired with a scoop of vanilla ice cream, and this baby was DEMOLISHED. It’s somewhere between a brownie and a sheet cake, a touch denser than a normal cake, but oh so delicious. .
Paleo Chocolate Tahini Sheet Cake
1/3 cup butter or coconut oil, melted
3/4 cup coconut sugar
2 @vitalfarms eggs
3/4 cup @seedsofcollaboration tahini
2 tbs maple syrup
2 tsp vanilla extract
1/4 cup milk of choice
1 1/2 cup almond flour
1/4 cup + 2 tbs cocoa powder
1/2 tsp salt (to taste)
1 tsp baking soda
1/2 cup chocolate chips (optional)
Heat oven to 350 and line 13x9 pan with parchment paper. In a large mixing bowl, cream together butter and coconut sugar. Then add remaining wet ingredients and combine thoroughly. Add in dry ingredients and stir until well combined. Fold in chocolate chips. Pour batter into pan and spread until even. Bake for 18-22 minutes or until toothpick comes out with a few wet crumbs (don’t overtake or it will dry out!). Let cool completely, then top with frosting of choice (I used @missjonesbakes chocolate frosting)

They’re paleo + refined sugar free, AND TOO DAMN GOOD 😲 I didn’t follow her directions to a tee (because I suck at reading directions) and they still turned out DOPE. Plus, Nicole is one of those rad females who truly supports other rad females, and we should always hype queens like that up 🙌🏻🙌🏻🙌🏻. .
Life Changing Tahini Chocolate Chip Cookies
1 cup @soomfoods tahini
1 cup @bobsredmill almond flour
1/2 cup @thrivemarket maple syrup
1 @vitalfarms egg
2 scoops @furtherfood collagen peptides
1 tsp baking soda
1 cup @enjoylifefoods dark chocolate chips
Mix together wet ingredients + collagen peptides. Add dry ingredients and mix well. Set in fridge for 20 minutes. Meanwhile, turn on oven to 350. Scoop onto lined baking sheet and bake for 9-12 minutes (crispy edges, underbaked middle 👌🏻). Top with sea salt and DEVOUR

Pumpkin Protein Truffles 🎃🥜😱 the perfect treat that’s part Reese’s, part pumpkin pie, and totally delicious. You’ll think you’re eating candy but these are sneakily grain free + refined sugar free! .
Pumpkin Protein Truffles (Makes about 20-25 Truffles)
2/3 cup pumpkin purée
2/3 cup peanut butter
1/4 cup coconut flour
Pinch of salt
1 scoop chocolate protein powder - I used @ancientnutrition bone broth protein
5 oz (1.5 bars) @evolvedchocolate dark chocolate, melted .
Mix together pumpkin, nut butter, coconut flour, protein powder. Should feel like cookie dough. If it’s too dry, you can add a little water or almond milk. Roll into balls, and place on a plate with parchment paper. Place in freezer for 30 mins to harden. Melt chocolate. Using a fork, dip into chocolate to coat. Place back on parchment-lined plate and refrigerate. .
NOTES: you can use any nut butter you want. Make sure you like the taste of your protein powder (and yes you can use any brand and any flavor you want). Swap for protein: another 3 tbs coconut flour. Swap for coconut flour: 1/2 cup oat flour or almond flour.
