Noodles with charred scallion oil, served with homemade habanero chili paste 🌶 Perfect when you’re too lazy to do groceries but you want something other than instant ramen 🙄
Dice the white part of the scallion into chunks, then lengthways to julienne. Fine slice the green part.
In a pan on medium heat, with a couple of tablespoons of canola oil, fry the scallion whites until well charred, brown but not black. Toss in cooked noodles (you can use fresh ramen noodles), a dash of dark soy, light soy and sugar, adjusting to taste. Fold in the fresh scallion greens and serve.

Today was treat yo self Sunday here. We hosted Alex’s family for a Sunday dinner & I made this to die for Chocolate Streusel Coffee Cake!
I was doing my daily @pinterest perusing & found this recipe from @yogaofcooking 💙 I will totally be making this awesome chocolately cake again. I wish I had taken a shot of the layer of chocolate, brown sugar & walnut in the center of this cake.
I am calling Autumn Gods to brings us cooler weather because right now it feels like the peak of summer😭😭

Saying adios to summer in the same way we rang it in... with a S’mores Off!
big thanks to @ghirardelli@thefeedfeed for sending me some of their caramel filled chocolate squares to really help me up my s’mores game.
For my entry in last night’s competition I was dreaming of an Elvis inspired s’mores with caramelized banana rounds, melty peanut butter and delicious gooey Ghiradelli Caramel Sea Salt Dark Chocolate. But since the last of the bananas had just been thrown in a loaf of fresh banana bread I just went with it and used grilled banana bread squares as a stand in... and let me tell you the King and I might be on to something here! The crisp toasted bread with soft pillowy interior is the perfect accompaniment to all that gooey goodness 👌👌👌 thank you, thank you very much.
The King S’mores:
Toast 1 graham square and 1 banana bread square then top graham with a smear of peanut butter and 1 Ghiradelli chocolate square. Leave to melt over warm flame while toasting a marshmallow (or 2!). Then sandwich toasted marshmallow between caramel filled chocolate square and toasted banana bread & enjoy!

Sous vide the pork chop with salt and pepper at 54.5C for an hour. Sear it in a hot pan, basting with butter, fennel seeds and garlic. Simple but tasty 😋
Where the kale did August go?? Summer is fleeting, so it’s your last chance to celebrate amazing, sweet heirloom tomatoes at the farmer’s market. I like to serve them simply with a salty, crunchy bacon and pumpkin seed crumb 😋
Dice bacon into slivers, and fry them off in a pan until crispy. Toss in pumpkin seeds and panko breadcrumbs and fry until the seeds are lightly toasted and the panko is golden brown. Remove from heat and fold in chopped basil and chives.
Season tomatoes with salt, pepper and EVOO and top with your crumb mixture.

Had friends over for dinner the other day! So naturally I had to make:
1. Burrata with fresh snap peas and mint
2. Crispy salmon with creamy cauliflower purée, tomato, corn and chorizo
3. Homemade tagliatelle with shrimp and summer squash
Pan-seared salmon with soy-maple glaze, so simple and so good with steaming bowl of jasmine rice.
Serves 2-ish: Cut 1 lb. of salmon into ½ inch slices. In a hot cast iron pan (or nonstick pan), add some neutral oil and sear the salmon slices on medium-high heat (in batches if necessary as you don’t want to crowd the pan), about 2-3 min on one side, flip and cook for about 30 sec-1 min on the other side.
Meanwhile, stir together ¼ cup EACH of soy sauce, real maple syrup and unseasoned rice vinegar in a small saucepan. While the salmon is cooking, bring soy sauce mixture to a boil on med-high heat, reduce heat and let cook for about 2-3-ish minutes or until slightly reduced. It should sort of coat a spoon and seem to have thickened just a bit. Keep in mind that the glaze will slightly thicken more as it cools down.
Place salmon on serving plates, drizzle sauce all over, top with scallions + sesame and serve with hot rice 🍚

Chinese BBQ rice (Char Siu rice '叉烧饭')😋
Happy Saturday, everyone🤗. Sharing a popular roasted dish that's usually serve with flavored rice, cucumber & chili sauce. 'Char siu', char = fork, siu = roast/burn is a method used to cook this dish, very similar to kebab. The sauce is sweet, sticky & goes well with the aromatic rice.
🍃Chili sauce: Blend 4-5 red jalapenos, 3 tablespoons rice vinegar, 1 tbsp maple syrup, 2 cloves garlic, 1 slice ginger, dash of salt until well combined. Taste test, more salt if needed, this chili sauce should have a tangy flavor. Lime juice can be used for extra flavor. Refrigerate until ready to use.
~ 1 cup Jasmine rice, rinsed thoroughly & drained
~ 2 cloves minced garlic, 1tbsp grated ginger, 3tsps sesame oil, 1/4 teaspoon salt
~ 1 1/4 cups water
(Instructions adapted from Bon Appetit, I usually use rice cooker but in case you prefer a pot☺️)
✔️In a heated pot with sesame oil, sauté garlic & ginger until fragrant. Add rice & stir continuously, then add water & salt. Bring it to boil, turn heat to low & let simmer (just barely) for about 18 minutes. Turn off heat, cover lid & let rest for 15-20mins. Prep tofu while waiting. Use a fork to fluff the rice when ready.
~ 1 pack firm tofu (16oz), drained really well, cut into 3 long logs, shallow pan fried until golden brown with oil
🍃Char Siu sauce: Mix together 4 tbsp hoisin sauce, 2 tbsp garlic chili sauce, 1.5 tbsp soy sauce, 4 tbsp water, dash of berry powder (optional) until well combined
✔️Pour sauce into a pan, bring it to boil and let simmer until sauce thickens a little. Slowly add in tofu, using a spoon, scoop sauce and coat tofu well. Sauce will starts to thicken up more & stickier towards the end. Once tofu is all coated, turn off heat, cut into 1/2 inch thick pieces & slather with remaining sauce when serve.

Happy FriYay, friends🤗 so, what do you get when you add fruits to your fried rice?
Expect a sweet, tangy and appetizing dish with a tropical feel🌴 that you won't stop with just one spoonful🤭.

Recipe (serves 2-3)
~ 2 cups cooked Jasmine rice (used rice cooker)
~ 1/2 cup of each: dry roasted cashew, fresh🍍chunks, pan fried tofu, broccoli stems
~ 1 small carrots - diced
~ 1 small onion - sliced
~ 3 cloves garlic - minced
~ 1 tablespoon sliced jalapeño
~ oil, salt to taste
🍃Sauce (mix together): 1.5 tablespoons 'fish' sauce (recipe on highlights) & 1.5 tablespoons soy sauce/liquid amino ✔️In a heated non-stick pan with 2 teaspoons oil, sauté onion, garlic, & carrot until soft. Then, add broccoli stems, tofu, rice and sauce. Stir continuously until all rice are well coated with sauce.
✔️Finally, add cashews, pineapple, jalapeño and season well. Super easy and quick for any meal of the day. You can add other green veggies as well. Serve warm with some Thai basil.😋 ✨Few tips to get fluffy rice:
- When you cook your rice, use a little less water than requested. I have always used my rice cooker, and my finger to gauge the water needed.😜
- Let rice cool down first. Some people love to use overnight rice and I do that too for kids' lunch, same results.👌🏻
*In case you were wondering what I did with the remaining pineapple, it was served as fruit and I composted the skin.😁
