Many Vietnamese settled in communities in San Diego, most notably in Linda Vista and City Heights. And they have been an integral part of both neighborhoods since.

Hatch Chile Flank Steak w/ChimiVerde & Chipotle Garlic Egg Hash. I have been on a roll cooking steak with my Hatch Chile Rub. It’s so good... try it yourself. Seriously. This insanely marbles flank steak paired with my signature chimiverde sauce. This is a blend of chimichurri and salsa verde to bring out the best in both! Made some Chipotle Garlic Potatoes topped with eggs and then topped with the sliced steak. So delicious!!! Cheers 🍻 🍳 🥩 🔥

And now for something completely different! This weekend we had dinner out and Mrs Buddha ordered beef lettuce wraps for our appetizer. They were good... but not great. So, I got to thinking... I can make an upgraded version of this and post in place of the typical “taco Tuesday” posts you are seeing in your feed today. Thankfully, I had this beautiful @snakeriverfarms American Wagyu flank steak on hand which was the perfect canvass for this dish. Now grab a cold Sapporo and enjoy this recipe for Korean Beef Lettuce Wraps.
5 T soy sauce
3 T sugar
2 T Mirin
4 T pineapple juice
4 cloves garlic, minced
2 t grated ginger
1 T gochujaru
2 T sesame oil
1/4 t black pepper
3 scallions, minced
2 lbs flank steak
Mix all the ingredients except the scallions and beef together with a food processor or hand mixer. Pour marinade and sliced scallions over the meat in a @cambromfg Camwear Food Pan. Let that marinate in the fridge for 4 hours. Remove from food pan and let come up to room temp while you light your grill. For this cook I used my @biggreenegg MiniMax set for direct grilling at 350°. Grilled the steak 4 minutes per side until the internal temp measured 125° using my @thermoworks ThermaPop. Let the meat rest for 10 minutes before slicing. Made the wraps with leaf lettuce, rice noodle, Gochujang mayo, and kimchi. Soooo good!
