Having a wide variety of potatoes is important for the body AND for growing. In the 1800s Irish Farmers only grew one variety of potato Irish lumper -(called monoculture) which greatly contributed to the Irish potato famine. .
I think you should just eat food just becuase when it’s REAL, mostly whole but hello celebration foods, always delicious, it greatly aids a goal of living a healthy life plus variety is the spice of life but here’s one last fun fact that may want to have you try this beautiful medium starch potato. It contains anthocyanin an antioxidant not found in white potatoes, and may have anti-viral, anti-cancer and anti-viral benefits in addition to flavonoids aka flavor. A fact we learned from the in-house RD today! Sharing is caring, knowledge is power and love is always the best ingredient. Hope you try some different colored patatas this season!

Delicious quinoa breakfast bowl made with Quinoa & Kale .
Cook 4 pieces of bacon on the stovetop to desired crispiness (feel free to sub with turkey or meat-free bacon as desired). Remove the bacon, chop it into small pieces, and set it aside. Reserve 1 tbsp of the bacon grease in the pan (or add in 1 tbsp olive oil if using meat-free bacon), and cook 14 oz cubed butternut squash for 12-15 minutes over medium high heat stirring regularly. Add in 6-8 sliced white or bella mushrooms and 5 sage leaves. Season with salt and pepper and continue to cook 3-5 mins. Mix in @pathoflifebrand Quinoa & Kale and cook for an additional 5 to 6 mins. Turn off the heat and mix in the chopped bacon. Divide the quinoa mix between two bowls, top with desired toppings, and enjoy! I topped mine with a pasture-raised fried egg, avocado slices, and a little fresh thyme which I’d highly recommend 👌😋
