@glutenfreefest today! The first of a few posts. I gotta say for the second GF fest this year, I am overwhelmed by the amount of community support. In Niagara, we don't have many options. I travel to Toronto and Kitchener often now and find myself having more options than I can handle! I do love it. Thank you! #glutenfree

Encontramos varias felizmente y para esta ocasión elegimos @yunkakusi y el postre elegido fue torta de zanahoria 🥧. Lo genial de esta pastelería #gf es que también tiene opciones #sugarfree y así cuidamos también a las personas que necesitaban comer libre de azúcar 😊😊😊. Nos encantó el sabor, y el postre no duró nada en la mesa, les encantó a todos incluso los non gluten free jeje.

My trip came to an end 🥺 and needless to say I'm not ready to go home 😂 Disney was awesome, Eliana loved every second and I soaked up my time in San Diego. I'll be sharing my eats/drinks from the entire trip on the blog and on here. In the meantime, leaving you with my #SalmonSunday over jalapeño + avocado spaghetti squash. SO good AND healthy 😻.
You'll want to save this, even just for the sauce. Also, tag someone who loves spicy food 😍.
➕1 salmon (wild and seared 1 min per side).
➕Spaghetti squash (already roasted).
➕2 tbsp jalapeño juice.
➕3-4 pickled jalapeño slices.
➕1 tbsp almond yogurt.
➕2 tbsp chopped scallions.
➕2 tbsp cilantro.
➕salt and pepper.

➕Spaghetti squash ya cocida.
🌟salsa de aguacate:
➕2 cdas jugo de jalapeño.
➕3-4 tiritas de jalapeño de lata.
➕2 cdas cebollin picado.
➕2 cdas de cilantro.
➕1 cda yogurt de almendra.
➕sal y pimienta al gusto.
Happy Sunday, friends! Here’s a super simple and delicious recipe for you. The bonus is that it also reheats so well, so you could absolutely prep this today for breakfast this week. Win win!
2 tbsp olive oil or butter
One medium sized sweet onion, sliced thin
6-8 slices of bacon
4 oz sharp cheddar cheese
2 tbsp heavy whipping cream
1/2 tsp salt
Chives, dried or fresh (optional)
Start by cooking your bacon. You can do this in a skillet or use my favorite method: bake on a baking sheet at 350 degrees. Crumble the bacon once it’s done. Next, grab a well seasoned cast iron skillet and add the oil/butter over medium-low heat. Once melted, add in the onion and cook for about 10-20 minutes, stirring occasionally, until the onions have caramelized. Add the crumbled bacon. In a separate bowl, whisk the eggs, cream, S&P, and cheese. Add the egg mixture to the skillet, and cook for about 4 minutes over low heat. Sprinkle the frittata with chives, and transfer to a 400 degree oven to finish cooking (8-15 minutes- keep an eye on it!) ENJOY!

Escogimos Lomito al Brócoli 🥦 🍽️ y aquí les va la receta.
✔️Lomito de carne u otro corte de su preferencia (para guiso)
✔️Cebolla y ajo molido
✔️Sal, pimienta y Comino al gusto
✔️ Guarnición (arroz 🍚) En una olla con aceite, se prepara aderezo de cebolla, ajo, sal, pimienta y Comino. Cuando esté casi frito, incluir la carne y 5 gotas de vinagre, luego rellenar con agua hasta que tape la carne. Una vez que la carne esté cocida, agregar el brócoli en tallos pequeños previamente lavados y esperar que esté cocido evitando que se seque toda el agua. Y Listo! Se puede acompañar con guarnición de 🍚.

Gluten Free Panini
My oldest daughter asked me a couple of weeks ago to make a panini with grilled chicken, fresh mozzarella, tomato and homemade pesto one day for lunch. I hadn’t ever made a panini before but it was easy and something you could prep before (realized this after I woke up before the sun came out to grill the chicken before school 🤪). But you can grill the chicken, make the pesto, slice the tomato and fresh mozzarella all ahead and store them all in containers until you’re ready to make it.
Here it is..I grilled @bellandevans chicken with salt, pepper and olive oil. I sliced up fresh mozzarella and tomato. I had reserved some of the pesto I had made the day before for pasta. I used @schaerglutenfree ciabatta rolls (this daughter’s favorite and many of you had suggested as good bread for paninis) and spread the pesto on one side. Then I brushed olive oil on both sides of the outside of the roll. I pressed the sandwich with a pot for a few minutes on each side. Voila! She absolutely loved it!
Honestly the best pizza I’ve brought since becoming gluten free, @dominos in Barcelona beats any uk one I’ve had! Love the sticker seal “Gluten Free Sin Gluten” for the fact my Spanish is non existence but still feel safe to eat it! • 🍕🇪🇸 #GlutenFree#GlutenFreeBarcelona

Good afternoon my sweet friends ❤️ I hope today is shining bright wherever you are. Today is an exciting one for me... I passed the zoodles test! I’m a huge fan of veggies and I was hard pressed to give them up when I got sick. As you may know, vegetables can be difficult to tolerate when your digestion is compromised.
When I first began reintroducing veggies, I began with carrots. I steamed them for hours, then puréed them in my blender. It was a lengthy process that didn’t yield the best taste, but it was what I could tolerate at the time. After that, I moved onto preparing butternut squash the same way. Eventually, I could tolerate baked squash, roasted carrots, and steamed spinach. Zoodles was next on my list (and by list, I mean the stages of SCD) and I’m so happy to finally tick that box.

I’ve been a little crazed these last few weeks. Worn down, tired, over it. I opened my eyes on Saturday at 8 AM + my feet hit the floor + I felt myself start on that wheel again: be productive, do, cross things off the list, go, go, go.
The funny thing is, I love my life when it’s unfolding gently at a peaceful rhythm, yet I often feed my activity addiction + the anxiety that comes along with that. I crave rest but sometimes it feels irresponsible. I crave my alone time but sometimes it feels selfish. I crave doing my thing but often pour a lot more of myself + my energy into things that are not mine — when I’m out of balance, anyway.
So, I crawled back into bed after brushing my teeth + making coffee. I reminded myself that there’s actually no agenda + let myself rest + rise again... slowly. My sister called. I read a magazine + edited photos in sweats on the couch. I picked some wild-growing mint from the bushes by my place + made this simple salad. I left my house to spend leisurely time with a friend — to talk, play in the waves, watch the sunset + fill our bellies with Indian food.
There is so much solace in these simple things; quiet joy. Unfolding gently at a peaceful rhythm 💚

Oven Roasted French Fries 🍟 Homemade french fries are easy to make and much healthier than fast food! Just four ingredients, potatoes, olive oil, garlic powder, and salt. Gluten-free, dairy-free, and Whole30.
🧡 🥞 PUMPKIN SPICE Pancake stack kinda day! These taste like pumpkin pie, AND are loaded with protein, and vitamin A. 🤤 Gluten free + dairy free and ingredients are easy to switch up to accommodate needs
1 cup of pumpkin purée, 1 cup of almond flour, 1/2 cup of @bobsredmill almond milk, 2 tbsp of coconut oil: melted, 1 1/2 tbsp lemon juice, 1 tsp maple syrup, 2 tsp vanilla essence, 1 tsp honey, 2 eggs, 1/4 tsp baking soda, 1/4 tsp salt, 1/2 tsp of cinnamon, 1/4 tsp of cardamom, 1/4 tsp of ground ginger 🧡 TOPPINGS: @daiyafoods Dairy free yogurt & butter, maple syrup, cinnamon, sunflower seeds, and frozen blueberries ——————————————————————————— 🧡RECIPE:
In one bowl mix together the dry ingredients until combined. In a separate bowl mix together the wet ingredients until well combined. Pour the wet ingredients into the centre of your dry ingredients (create a well in the middle of the dry ingredients before). Stir until everything is wet without over-mixing. Let sit for 10 minutes while heating a skillet to medium- high(ish) heat. You’ll want to be more patient with cooking these or they burn on the outside quick. Add coconut oil to the skillet and once it’s hot add 1/4 cup of pancake batter at a time. After about 2 minutes the outside should start to crust a bit and the bottom be golden brown, flip the pancake and cook for about another 2 minutes. Serve hot ✨

All you need is;
Salt and pepper to season joint
Wostershire sauce (GF)
2 beef stock pots (GF) in a pint of boiling water
Seal the joint on all sides in a frying pan with a table spoon of oil and transfer to your slow cooker
Pour in the pan your stock and worstershire sauce and a little extra salt and pepper and bring to boil
Pour over beef and leave on low for 8 hours
It literally falls apart as you lift it out 🤤🤤
I then add abit of the juices/stock into my gf gravy too 😍

Wow - how amazing is @beckyexcell gluten free Yorkshire recipe? I’ve seen sooooooooooo many people use it but never had the confidence to make them myself, but I put on my big girl panties and decided to make a favourite dish of Mr FreeFroms, Toad in the Hole. Such a random name, hey 🤣
I followed her recipe which was super easy to follow, I think I may have slightly over cooked them, but boy, it was tasty! I used a new sausage I discovered from @tescofood Finest, Red Leicester and Jalapeño sausages! They were really good. So flavoursome. Served it up with usual roast treats. I will definitely be trying this for Yorkshire puds when I next have a roast.
I had a wonderful day at the beach today, makes me really look forward to our holiday in a few weeks. Counting down is majorly happening.
