Keeping it simple - stew for dinner. This organic Irish beef mince from Aldi was a great find (I have about 4 of them in the freezer). Pack is smaller with only 350g but bulking up with green lentils. Using organic potatoes, carrots , leeks and onions from Whiteoaks acorn organic farm, some turnip and celery and buzzing to find some @carolsstockmarket Bone broth in the freezer. Use whatever mince, veg and stock you have. Sometimes depends on availability and affordability but just use the best quality you can.

so I’ve had some cans of pumpkin purée for a few weeks now promising myself I’d put them to use & today was the day I told myself, in earnest: you NEED pumpkin chocolate chip pancakes. as a therapist I am not one to deny myself or any human of needs, so I did my stomach’s bidding
1/4 cup* pumpkin purée (*generous, to the brim!)
1 whole large egg + egg white from 1 large egg
1/2 tsp vanilla extract
1/4 tsp pumpkin spice
1/2 cup oat flour (pulse 1/2 cup of rolled oats until fine-ish)
1/4 tsp baking powder
1 packet of stevia
optional: chocolate chunks, as desired
Steps: In a small whisk/mix the first 3 ingredientes until well combined. In a separate bowl mix the last 4 ingredients, then add to the wet bowl + mix until well combined (don’t over mix!) Add chocolate chunks to your heart’s content + a splash of milk, if needed. Warm a non-stick pan over low-medium heat, using non stick spray (or butter if desired) to coat the pan. Add the batter in batches - I used a 1/3 cup measure and got 3 pancakes total. Serve with honey, fruit, or peanut butter like I did and #treatyourself .

We’ll call this ‘Spice Bag adjacent’ - ie, my ‘can’t be arsed going to the shop so will make do with what’s in the fridge’ take on the real deal. Chips, pulled chicken, onions and chillies topped with *authentic* Irish spice bag seasoning via @gastrogays.
Acar kuning or yellow pickled only based on simple ingredients. A side dish that compliments other main dishes. Ingredients:
2 small shallots.
2 chilis (you may skip)
2 cm tumeric (1 tsp tumeric powder)
2 tbs cooking oil
1 tbs white vinegar.
1/2 tsp white pepper.
1 tbs white sugar.
Salt to taste.

Dzisiaj puszysty omlet z bazylią, oregano i rukolą, mozarellą i parmezanem. Dodałem kilka ziaren granatu i plaster prosciutto crudo.
Składniki - 3 jajka
- Posiekane zioła - 100 ml wody gazowanej
- 50g starta mozarella i parmezan
- Sól i pieprz
- Rozdzielić żółta od białek.
- Rozgrzać piekarnik na 180 stopni funkcja grill.
- Do białek dolać wodę i ubić.
- Dodać żółtka i sery, zostawić trochę parmezanu na koniec - Delikatnie wymieszać i wylać na średnio rozgrzaną natłuszczoną patelnie.
- Posypać resztą sera i zapiekać chwile w piekarniku.

🛒 Teriyaki sauce, Unagi, rice, 2 eggs, some sesame for garnishing and vegetables
1. Unfreeze the unagi fillet and pan fried it without marinating
2. Apply one coat of teriyaki sauce when the unagi is cooking
3. Cover lid and let the fish cook
4. Add, layer by layer, teriyaki sauce when the sauce is frying. Flip the unagi fillet frequently with low heat
5. Add the final coat of teriyaki sauce and remove unagi from pan
6. Cut and put on the rice with eggs and vegetable ;) 7. Garnish with some white sesame so it smells nicer and look more instagrammable :) #fattyjonjohn_eats #fattyjonjohn_cooks
Socca pancakes with garlic mushrooms, thyme and parsley. These Gram flour pancakes are really, really good, bit better for you than white flour and I think gluten free? Either way, they’re on the permanent menu from now on and so easy - 4 1/2 oz of Gram flour, 20 1/2 floz of water, whisk stand for 15 mins or so and spoon into a lightly oiled pan until crispy and golden 😍
After last night’s manic baking session, a simple but elegant lunch of pan-fried, garlic butter sea bream with Swiss chard and green beans hit the spot. I didn’t hover over the hob for long before it was ready, but had enough time to sample the matured macarons (they’re the best I’ve ever made). 🥰

I love fresh sausages. But I find that those I get are usually too salty or that the seasoning is too aggressive, taking away the flavor of the meat. 😬
These beef sausages with chorizo spices from @themeaterysg hits all the right notes. The best fresh sausages I've had, both self cooked and eating out. The seasoning is spot on, enough to bring out the taste of the beef rather than hide it. Very balanced. 🙌🏻
I served it with Pak Bor Chye leaves that was hard seared in a pan to give it some additional char flavors. The pan toasted slice bread had some buah keluak mayonnaise which was also drizzled on top of the sausage. 😋
The buah keluak mayo was just a mix of a buah keluak sambal paste from @batulesungspicecompany (fantastic on its own) and store bought mayo. Superb combination this! 💪🏻

This dish is something I’ve been wanting to make for a long time, and I finally got around to it! Adjaruli khachapuri is a Georgian cheesy bread dish that is the ultimate comfort food 🥰❤️ I made the dough from scratch and made these cute little boats that I then stuffed with feta and mozzarella cheese! To top it all off, you add an egg and then bake to perfection 💕 This is truly the perfect dish to me - bread, cheese, egg, what more do you need?! Well, probably vegetables, but I’ll eat some more of those tomorrow🌈 ————————————————————

Pupusas are one of my all time favorite foods 🥰❤️ These lovely babies originate from El Salvador and are made by stuffing a corn flour dough with various fillings then grilling to crispy perfection! I filled my pupusas with refried beans, cheese and crispy pork belly✨ Pupusas are typically served with a vinegary cabbage slaw called curtido! I also served mine with a homemade salsa roja❤️ ————————————————————————

FULL ENGLISH! You can’t beat a full English for breakfast. One of life’s blessings 😂 self explanatory really. These sausages are @powterssausages Chilli Pig ones and they are phenomenal! They were grilled along with the bacon, black pudding and sourdough bread (drizzle of oil). There’s beans, tomatoes and some chill mushrooms that were done in the pan. Scrambled egg and a nice big yolk duck egg! GET IN!

100g peas (defrosted)
1 tbs olive oil
4 rashes bacon chopped
2 cloves garlic finely chopped
2-3 tbs creme fraiche -
Cook the gnocchi according to packet instructions, add the peas with 1 minute to go, drain and set aside
Fry the bacon in the olive oil for 2-3 minutes until it begins to brown
Add the garlic, fry for another minute
Add the cooked gnocchi, peas and creme fraiche, season with black pepper
Toss together and serve -
