Least satisfying #smoothie video ever 😂😂😂 “Get the stick thing...what the hell is it called?? Oh yeah where’s the tamper?” We are having a total nutrition overhaul for the kid. The busier we’ve gotten the worse he’s been eating. Time to roll up our sleeves and get some prep done with healthy snacks, packed school lunches and a few healthier treats sprinkled in.

Saturday’s are for Snuggles, Cartoons and Pancakes! 🥞
Who says pancakes can’t be healthy? Try this low carb Pancake Recipe! Even the kiddos will approve!
1/4 cup coconut flour
1 tsp xylitol
4 tbsp unsalted melted butter
1/2 tsp baking powder
pinch of salt
1/2 cup milk
1 tbsp vanilla extract
butter for cooking
Serve with Real Butter, sugar free syrup or fresh berries. Enjoy!
Bacon wrapped meatloaf stuffed with ham, cheese, and spinach. You had me at "bacon wrapped"! This meal was made after scrolling through Facebook watching food videos while hungry and saying "Yesss, I have to try that!" Recipe below from their comment section:
2.5 lbs ground beef
1 cup bread crumbs
2 tsp salt
1 tsp black pepper
1 tbsp garlic powder
4-6 slices ham
6-8 slices cheese
2 cups raw spinach
10-12 slices raw bacon
Preheat oven to 350°F
In a large mixing bowl, combine ground beef, eggs, bread crumbs, salt, pepper and garlic powder and mix until well combined. Place the beef mixture on an aluminum foil lined medium sized baking sheet and distribute the meat in one even layer. Place ham, cheese and spinach in layers on top of the ground beef. Starting at one end, lift meat carefully to begin rolling into a log (use the foil to help facilitate rolling and try to keep a tight roll). On a separate baking sheet lined with aluminum foil, place sliced bacon side by side overlapping each other. Put the roll of ground beef on the bacon at one end. Roll the mixture again carefully to make sure the bacon is tightly wrapped around the meat. Bake the beef log wrapped in bacon covered with aluminium foil for 25 minutes. Remove from oven and increase the oven temp to 500°F. Remove the foil from the beef log and place back in oven for 20 minutes when oven reaches 500°F to get bacon golden brown and crispy. Keep an eye on it so bacon does not burn. Let cool for a few minutes then slice and serve.
PRO TIP: This could create a little oil splatter in the oven and possibly set off a smoke detector (but it's worth it). However, if you have a grill you can crank to 500°F and finish the last step of cooking with indirect heat on foil in the grill . . . you could save yourself some mess and add a little smoky grill flavor.

This week I re-shot my Lemon ginger tea as it is my go-to drink in the winter months and it’s so simple and so good that I wanted to make sure you all try the tea and enjoy the benefits!

Ce spuneți de niște turtițe moi și delicioase? Sunt și foarte ușor de făcut, deci vă pot ajuta și cei mici.
Ies foarte moi, numai să le coaceți pe foc mic.
Pentru un plus de aromă, după ce le scoateți din tigaie le puteți unge cu puțin unt topit amestecat cu usturoi zdrobit (sau pudră) și puțin pătrunjel. Eu le-am lăsat simple și ne-a plăcut mult rezultatul. Șugubățul a mâncat aproximativ 1 turtă.
Dacă le încercați nu uitați să îmi dați tag sau să reveniți cu feedback 🤗
Turte cu brânză și spanac ➡️
🔹 200g făină de grâu tip 650
🔹 200g smântână/ iaurt grecesc
🔹 1 linguriță praf de copt
🔹 1/2 linguriță ierburi de Provence
🔹 140-150g caș nesărat/ mozzarella /emmentaler /telemea desărată (în funcție de preferințe și de vârsta copilului. Eu am folosit telemea ușor sărată, cu 0,5g sare)
🔹 1 lingură fulgi de ceapă
🔹 1 mânuță de baby spanac sau câteva cozi de ceapă verde
🔹 Mărar uscat
Într-un bol sfărâmați brânza sau dați-o pe răzătoare.
Spălați și scurgeți bine de apă spanacul, tocați-l mărunt apoi transferați-l în bolul cu brânza.
Adăugați fulgii de ceapă, mărar uscat, puțin piper și amestecați bine.
Formați un aluat din cele 3 ingrediente scrise mai sus și condimentele.
Împărțiți aluatul obținut în 8 bucăți.
Pe blatul înfăinat întindeți fiecare bucată de aluat, apoi distribuiți amestecul de brânză în centrul celor 8 discuri de aluat.
Aduceți spre centru marginile fiecărui disc de aluat făcând niște pliuri și sigilați bine.
Întoarceți-le cu îmbinătura în jos și întindeți cu sucitorul cât de subțire puteți, având grijă să nu iasă umplutura în exterior.
Coaceți turtițele într-o tigaie antiaderentă încinsă bine, pe foc mic.

These cookies are packed with some healthy ingredients like bananas & oatmeal while still satisfying your sweet tooth 🙌I had some overripe bananas to use up so why not?! Mashed bananas allow you to cut down on a lot of the sugar and butter and you can always make these your own by adding dried fruit, nuts, and some different mix-ins like mini marshmallows, peanut butter, toffee, or if you ask my youngest, all the mini chocolate chips you can get your hands on 😅

Venison burgers topped with egg (everyone but mine got grass-fed cheese). Balsamic brussels and apples
We’ve eaten Brussels twice this week because my kids love them and I’m on a mission to give the fans what they ask for 💪🏼 I’ve successfully avoided eating out on a Friday night AND avoided grocery shopping this week 🙌🏼 I’m all about cleaning out the fridge until it’s completely empty- my husband hates it, but doesn’t mind the 💵 I save us by actually using the food we buy!
Plus, if I ever go on CHOPPED, I have a good chance of winning. My lazy girl cooking methods may pay off one day.

Do you struggle getting your kids to eat healthy food? Getting my kids to try new things, and eat variety can be challenging. However, since our kids are getting older, we've offered meals "family style" so they have control of what they put on their plate. HUGE success!
We notice they are more likely to eat what's on their plate because THEY put it there. Such a simple solution!!
Our fajita station allowed then to get creative with their masterpiece. Complete with all the fixin's; shredded romaine, Jasmine rice/black beans, Mexican seasoned chicken breast, avocado, cherry tomatoes, Greek yogurt, sauteed bell peppers/onion, salsa, shredded cheddar, cilantro, green onions, and red onions.
Made mine into a yummy fajita bowl!
Took a late nap and woke up at 6pm wondering what year it was?!
Realize I had no idea what to make for dinner and it needed to be done NOW! I threw this together. I've called it..
Inside out Pot Pie
3 c almond milk
1/3 c flour
3 T nutritional yeast
1/2 T salt
Bring to boil and whisk
Sauteed, add liquid mixture, serve over rice! .
Added almonds optional

Always in creation and experimenting with ingredients and recipes. I feel sometimes that my trash gets more action that our bellies. BUT our house always smells like either a bakery or restaurant. Who needs air fresheners when you have homemade food!?!
These cutie apple mini muffins are yummy and so easy! Made them as my little one was home this afternoon not feeling so great. After many tries and muffins tasting like hockey pucks, this final attempt with adjustments to ingredients was the trick!
Olive oil and apple sauce for the win. Sick kid approved! And with lots of left overs for the freezer for lunchbox treats.

APPLE MINI MUFFINS
1 1/3 cups unbleached, all purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin spice
1/4 teaspoon salt
2 large eggs
1/2 cup olive oil
1 tablespoon honey
1/3 cup packed dark brown sugar
1 small apple plus any juice, finely grated
1/4 cup finely grated carrots
4 ounces unsweetened apple sauce with cinnamon
Preheat oven to 350 degrees. Grease mini-muffin tins.
In a medium bowl, whisk together the flour, baking soda, pumpkin spice and salt.
In a large bowl, combine the eggs, olive oil, honey, brown sugar, grated apple, grated carrots and unsweetened apple sauce.
Using a spatula, fold the dry ingredients into the wet mixture until just combined.
Fill each muffin cup ¾ of the way up, and bake for about 15 to 18 minutes in mini-muffins tin. The muffins are finished baking when an inserted toothpick comes out clean.
Store in an air tight container.

When you were 1, this was simply a TREAT for you, & an easy snack to whip up for mom. ⠀
Now at 4? This is essential bc of the intense "NO" you are feeding back to me & it seems as though it's the only thing I can willingly get you to consume these days. ⠀
One day you will know that Mama was happy & pleased that despite your 4yo rebellion, you were still consuming at least ONE full serving of both organic furits and veggies, probiotics, & healthy fats, & that it was an important compliment to the example you watched on the daily: A mother choosing to fuel-well & move her body, start the day with positive AFFIRMATIONS (I am still so impressed that this word is a part of your vocabulary right now), & despite the days you were a BIG stinker, you learned that it was a normal part of our day.⠀

#PBOTD - Fruit Salad and Cereal!
We had to use the big Launch box today to fit this huge fruit salad! We also had room for yogurt and a cup of the yummy Tamarind Ginger milk!
IN LUNCHBOX - mixed fruit salad with blueberries, blackberries, pineapple, mango, kiwi and pomelo.
- banana chocolate crispy rice cereal and tamarind ginger milk
- coconut chips, animal crackers and yogurt .
"Kid food" is code for "food that tastes amazing on the very first bite"! Which is fun. But I sell my kid short if I don't give them the time needed to learn to like food that takes time to learn to like.⠀
Sometimes it's scary when we serve a food they won't eat. Will they be okay? Will they get everything they need? I always remind myself that it's okay if my kids don't eat fish or broccoli or potatoes or whatever. I can find other nutritious foods that they will eat in the meantime. I can wait for them to learn to like family food before jumping to "kid food". ⠀
There may be times I choose to serve "kid food", but that's my choice. It's not something I HAVE to do because my child won't eat something. This won't be true for all kids (some SPD and autism moms may attest). But for the majority of kids, it's okay to let them learn to like family food on their own timeline without offering a "love it on the first bite" alternative.⠀
🐟I really loved eating the fish sticks in this picture. Brought me back to my childhood. I'm sure my mom only served them when she was at her wits end, but we adored her for serving them and they were nothing but magic to us. ⠀

I call this baby friendly because there is no added sugar or salt and it’s high in protein, fibre and omega 3 fatty acids. 🍌🍌 Bananas are a great first food for babies and are nutrient dense! They are loaded with potassium, magnesium, B6, soft and taste delicious!!
Serving a banana as it comes is of course the most convenient way BUT it is so important to serve the same food in different ways to expand your little one’s palette, introduce different flavours and textures and get them used to eating a variety!
Here are 4 easy and delicious ways to serve your baby bananas.
🍌 Cut a banana into half (or if large into thirds). Leave the peel on the bottom to act as a handle
🍌 Mash and spread onto toast. I add in some nut butter or sprinkle over some milled flaxseed for a nutritional boost
🍌 Slice the banana into quarters lengthways, so that they are perfect for little hands to hold!
🍌Purée with pear, apple and spices. This is really delicious and you can either serve as it is on a spoon or add it to oatmeal or Greek yoghurt. Recipe coming tomorrow

I know if I only offer fruit for a snack, my son is hungry again SO quickly; pairing with protein and healthy fat keeps him full for longer and also helps the absorption of fat soluble vitamins from the fruit 🙌🏼 Cute heart shapes are totally optional but a little effort can go a long way in helping your little one try something new! NOTE: For babies and toddlers cut the blueberries in half.
If your little ones are still learning to like certain food, it’s a great opportunity to get them involved using cookie cutters as touching, smelling and even playing with a new or disliked food counts as exposure. Furthermore cookie cutters can make food fun for some kids. New and interesting shapes can really spark their interest!

It’s hard to remember that when the tiny human is yelling, “NOOOOO!!!!” at me all the time. 😅⠀⠀
Seriously though- if you only take one lesson from me, let it be this.⠀⠀
You need to let them be in control of what and how much they eat. BUT you are the gatekeeper!⠀⠀
The adults in the house are the ones who make the decisions on what to buy and what to serve. Even when the toddlers turn into whiny monsters who demand chicken nuggets for every single meal, you have to remember that you can say no!⠀⠀
I’m not saying to be overly restrictive about what you serve. All foods can fit- we just want to make sure that we’re serving a good variety of healthy foods, most of the time.⠀⠀
And that’s really all your job is! To serve the food. Their job is to eat it (or decide not to).⠀⠀
So remember that your measure of success is NOT what they put in their mouth.⠀
