A twist on a tuna melt for lunch today. I blended basil, mint, lemon juice, garlic, mayo, and sour cream then added tuna, shallot, and celery and toasted on a piece of sourdough with a little bit of cheese on top! A fresh version of one of my favorites! PLUS a cara cara orange because they’re the best 🤗
This is their regular size bowl and it was 11.50. you can build your own or they have 4 features to choose from.
The menu indicates that everything is gluten friendly so I tried the high fibre bowl which was delicious. They just didn't have the pickled veggies that are supposed to go with it as they obviously are still working out the kinks.

crvena leća 125g
1 sredini ljubicasti luk
100g grana padana
1 srednja mrkva
2 žlicice soli,papar po želji
Mala žlicica dalmatinskih zacina
Krušne mrvice pomjesane s purom. ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️
Dobro isperite 125 g crvene leće pod mlazom vode. Stavite leću i 500 ml vode u manju posudu i pustite da zakipi.
Nakon što voda zakipi smanjite vatru i uz stalno miješanje pričekajte da se leća pretvori u pire, a tekućina iz nje ishlapi. Kada je leća kuhana ostavite je da se ohladi.
▪️Dok se hladi izribajte mrkvu, izrezite luk, izribajte sir.
▪️Dodajte sve ohladenoj leći te posolite, popaprite i dodajte suhe dalm zacine.
E SADA IMAM DVIJE VARIJANTE KOD POHANJA.
Ako Vam se zuri kao i meni toj smjesi dodajte 1 jaje[biti se malo rijeda] uzmite žlicom i uvaljajte obilno u krušne mrvice i ja dodam malo palente, te oblikujte kuglice.
Smjesu s mrkvom, sirom, lukom i lećom stavite u hladnjak na 30 min.
Od dobivene smijese napravite manje kuglice te ih panirajte samo s 2 jaja i krušnim mrvicama pomiješanim sa purom.
Przite u dobokom ulju do zlatno smede boje.
Svakako vam je lakse napraviti drugu varijantu,ali vrijeme pripreme je dulje.

*1/2 cup tapioca flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
*1/2 cup almond flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
*2 teaspoons baking powder (aluminum free)⠀⠀⠀⠀⠀⠀⠀⠀⠀
*1 teaspoon baking soda ⠀⠀⠀⠀⠀⠀⠀⠀⠀
*2 tbsp shredded coconut⠀⠀⠀⠀⠀⠀⠀⠀⠀
*Pinch of Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
*1/2 cup olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

1.Mix dry ingredients in one bowl and wet in another one⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.Mix altogether ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.Place mixture in muffin pan (I use a silicone one and they come right out)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Buffalo Cauliflower Tacos 🌮
You will need: Cauliflower florets, Almond flour (I used Bob's Red Mill), water, avocado oil, garlic powder, salt & pepper, Frank's Red Hot Sauce, melted ghee or butter. For the tacos: @sietefoods tortillas, shredded carrots, avocado, arugula, @primalkitchenfoods ranch dressing.
Preheat oven to 400F. In a large bowl combine flour, water, avocado oil, garlic powder, and salt & pepper. Once combined, add in cauliflower florets and toss to coat evenly. Lay out on a baking sheet and bake for 15 min.
In a separate bowl, combine buffalo hot sauce sauce and 1/4 cup melted ghee (or butter). Toss the cauliflower in the sauce and continue to bake for another 20-25 min (flipping halfway through) depending how crispy you like.
Arrange @sietefoods tortillas with buffalo cauli and add carrots, sliced avocado, arugula (or lettuce of choice). Top off with a drizzle of @primalkitchenfoods ranch dressing. 😋🌮🥑🥕🥬
I think my end of the week, clean-out-the-fridge salad bowls turn into some of my fav meals. They usually end up an odd combo of random things I need to eat before they go bad, but this one actually turned out pretty great!
It’s filled with the last of my frozen veggies, leftover pork tenderloin, a yummy home-made hummus dressing, and a somewhat sad looking (but still tasty) avocado. .
In my bowl is…
- Leftover Island Pork Tenderloin (recipe is several posts back!)
- Roasted carrots (seasoned with Mediterranean spiced sea salt and a little olive oil and honey - roasted on 425 for 35ish min)
- Frozen broccoli and brussel sprouts (seasoned with garlic powder, smoked paprika, and s&p - roasted on 425 for 40ish min)
- 1/4 avocado
- Greens (spinach and romaine) - Super quick hummus dressing (mix together 2 TBSP hummus, 1 tsp red wine vinegar, a sprinkle of smoked paprika, and enough water to get to the consistency you want! SO EASY!) .

It’s super simple, but sooo filling, satisfying and easy on my gut. They key to this fried egg and cheese sandwich is using Ezekiel bread, which I find much more satisfying and filling than regular whole wheat bread. 😋🍞🥚🧀
