Pad-Thai noodles for lunch tonight 🌱
1) Heat 3 tbl spns of Vegetable oil in a Wok. Add 1 tspn garlic paste, 1 tspn ginger pasta & fry for a min.
2) Add chopped vegetables of choice & fry for 2 min. Add 2 tbl spn soy sauce, 1 tspn black pepper powder, 1 tspn sugar & salt to taste. Stir & cook for a min.
3) Add 80% boiled Rice noodles & stir well. Cook for 2 min while stirring & turn off the heat. Enjoy 😋

Come Wednesday, we start turning kitchen creativity into high gear. We’ve eaten most of the meals we prepped on Sunday and start reaching for some of our fridge and pantry staples to create simply delicious meals. A few items you’ll always find? Frozen fruits and veggies, pasta, frozen pre-cooked rice, canned beans and fish, eggs, and condiments, to name a few! What are some of YOUR staples? .
Bowl dEats: •4 oz fresh or defrosted shrimp 🍤 •2 oz @lotusfoods rice noodles •frozen broccoli 🥦 •favorite marinade or use ours: 1/4 cup coconut aminos (or soy sauce + 2 tsp brown sugar) + 1 tsp sesame seeds + 1 clove minced garlic + chili garlic sauce or sriracha, to taste ⠀⠀ ⠀⠀
Directions: Whisk marinade ingredients together. Simmer in a small saucepan for 2-3 minutes, until fragrant. Optional: add a few tsp of cornstarch/arrowroot starch to thicken. Add defrosted shrimp and cook for 3-5 minutes, or until pink and done. Remove from heat and toss with sauce. Add to cooked noodles and broccoli. Enjoy!

FOCUS ON THE BASICS ⠀

My overloaded self wants to focus on all the tasks but I know what I really need in these situations is to focus on the basics. So that’s what I do... back to the basics:⠀

I don’t compromise on the basics to finish all the things or it makes me more stressed than I already am! How do you reset?
Where has the day gone? I threw together a very quick and very late lunch of lightly baked salty, peppery kale, fresh avocado, feta, pumpkin seeds and makeral. Topped with a sprinkle of raw organic Aronia and Seabuckthorn. And a sprinkle of Cornish seaweed for good measure.
I threw together is no exaggeration. I recently landed myself in A&E with extremely low blood sugar and was told that I need to eat more regularly. Admittedly I have been suffering with my shoulder to the point where I haven't been eating much at all. So here is a quick nutritious salad.
Kale - salt, pepper, garlic, olive oil. Bake for approx 6 mins in a pre heated oven.
Salad accompanied with a smoothie that was made yesterday. My favourite ginger and apple green smoothie.
A handful of kale, 1 apple, a thumb size slice of ginger, juice of 1 small lemon, half an avocado, 1 tin of good quality coconut milk (high coconut % no added sugar). .
Aronia (chokeberry) - is proven to fight insulin resistance. In a recent article published by the Sun Newspaper, Neurology professor Dr Miguel Pappolla and his team in Texas, linked chronic pain with insulin resistance. The link is in my bio.
Health benefits of aronia are linked to its high content of POLYPHENOLS (micronutrients packed with antioxidants that can improve or help treat digestion issues, weight management difficulties, diabetes, neurodegenerative disease, and cardiovascular diseases. Also prevents cancer, blood clots and heart disease.
Polyphenols are also thought to reduce inflammation, which is thought to be the root cause of many chronic illnesses. I love adding it to salads and smoothies as it's a sweet berry and adds a different dimension. Check my stories for the Seabuckthorn and Aronia 👀

Masala Chops & Fondant Potatoes #lunchinspo#dinnerinspo
I always receive many requests for a basic masala chops recipe. And it's really simple. So long as your chops are rinsed and ready to use, it's just to add some oil and spices to a pot and allow to cook till tender.
Whenever I cook lamb/mutton, I make sure to use mustard powder and brown vinegar to tenderize the meat and cook it on a medium heat till the meat is very tender. Another tip that I have. I never cook a Lamb Shank without using some Coca-Cola in it. And if you have fresh mango juice/mango powder, that tenderizes it quickly too. As South African Indians, we tend to overcook our meat. And there's nothing wrong with that, if that's how you prefer it, but makes sure your meat is not stiff. That's not enjoyable.
Something else my mama taught me, always braise your spices, then add your mutton and braise that, making sure no water remains in the pot before adding more, especially if adding in tomato after. Always trim off excess fat. Many people have complained to me that they just can't get their mutton dishes right because the smell of it, puts people off. In my opinion, you need to wash the meat, trim off fat, and soak for a little before cooking, especially if it's curry pieces.

| NATIONAL NUTRITION WEEK | This week it’s time to really focus on our veggies as we celebrate National Nutrition Week! The theme this year is to try for five serves of vegetables a day by doing more to embrace your veg “waste”.
Guys, only 4% of Aussies get in their recommended serves of veg each day. And, when you put that together with the fact that more than 1/3 of the average household’s rubbish bin is food waste...it’s time to act!
You can boost your veggie intake and reduce food waste by cooking smarter. Some of my fave ways to use up veggies are:
1. Use the skins, stalks and leaves of veggies where possible (eg broccoli stalks can be used in a soup, or blended into a pesto!) 2. Finely slice any ageing veggies and make a colourful stir fry with some noodles

What I love about intuitive eating is that there are NO rules! It all comes down to YOU, what you want, and what works best for your life🙌. I helped brainstorm a few meals with a client last week who is a busy mom and constantly on the go 🏃♀️. During her lunch break, she drives her daughter around and runs errands. Her time to eat is when she is in the car🚗, and while of course I typically recommend a more mindful environment while eating🍴, this is her life and the only time she has to eat lunch⏰. We brainstormed a few options that are QUICK and EASY for her to prep in a pinch, and one option we came up with were wraps🌯. Having a simple lunch plan in place made her feel at ease and relaxed, because before she would run home and throw something together as quick as she could, or stop at a drive-through. Both situations made her feel rushed when eating; now she is able to enjoy lunch in a more relaxed state by having her simple wraps that she can easily eat on the go. This in turn is helping her find food freedom faster, by using meal prep as a way to serve her life vs. dictate what she HAS to eat day in and day out.🙌⠀
I recommend prepping a few meals each week, and leaving room for flexibility if you aren’t feeling what you prepped that day😋. By doing this, you can choose another meal option and save your prepped eats for the next day 📆. The above bento-box style lunch is one of my fav lunch preps because of its ease and simplicity.
