I am a huge proponent about thinking what you eat every day and the impact it has on your health. It's easy to reflect on the food that constitutes your breakfast, lunch or dinner but we often neglect to realize the condiments or oils we use to prepare all these dishes.
Do yourself and your loved ones a favor this week - get rid of ALL nut and seed oils.
For cold applications like salad dressing and mayonnaise, we use extra virgin olive oil and avocado oil (both fruit oils) and coconut oil. For all cooking that requires heat, stock your pantry with high quality animal fats like butter, lard and tallow since they are safer, much more nutritious, and have a much higher smoke point.
Remember, we have been eating high quality animal fats for 3.5 million years, while nut and seed oils have only been in our diets for 125 years!
I feel like we are able to do this ALL day when we visit Mayo. So many sweet souls walking with their heads down, likely leaving a difficult appointment, facing unknowns or feeling uncertain about what lies ahead.
My heart loves being able to share a smile, hold a door or wish someone a good morning as they head out. I am thankful for others who do the same. You just never know what a smile could mean to someone. ⭐️⭐️⭐️ Speaking of Mayo, here are the latest updates:
We met with a cardiologist today and he is going to have me do a 30-day Holter monitor. I wonder if I can bling it up and make it cute?!! 😂
The doctor said it is possible that the crazy string of infections I had last spring and summer are still causing residual problems. This doctor is keeping lots of things on the table including an arrhythmia, POTS or a handful of other things that are not as straight forward - - in other words, there is no quick fix. 🤪 With that being said I am grateful that the nausea has subsided and I’m getting much better at avoiding triggers. If you see me peeling off layers or frantically digging thru my purse - fair warning because that probably means I’m sweating and nauseous. 😂😂😂 Whenever the boys see me do that they go open windows or find some mints. Lol!! They might leave random socks EVERYWHERE around the house and expect that I will pick them up ... but they take good care of me when needed!! 😘
Potato salad with GOOD FAT MAYO is one of our all time faves... here’s a great recipe from @elishacasagrande 😍
Roasted Potato Salad 🥔 Simon and the kids had this for dinner tonight - they LOVE this salad.
INGREDIENTS (Serves 4 - 6)
》2 tbsps olive oil
》1kg of white or red potatoes, washed & cut into 2-3cm cubes
》400g can lentils, drained and rinsed
》1 pomegranate seeds
》1 bunch fresh parsley, chopped finely
》2-3 tbsps good quality mayonnaise (I use @undividedfoodco)
》1/2 lemon, juiced
》himalayan salt & pepper
1. Preheat oven to 180°c and line a baking/ roasting tray with baking paper.
2. Toss cubed potatoes in a bowl with olive oil, salt & pepper than transfer to baking tray. Roast in the oven for approx. 1HR until golden brown.
3. In a small bowl, whisk mayonnaise with lemon juice until well combined.
4. Once roasted, add potatoes & mayonnaise to a large bowl then mix to coat all potatoes evenly. Add lentils, parsley & pomegranate seeds. Mix again until just combined.
5. Season with salt & pepper and serve potato salad as is or alongside your favourite source of protein.
