From #India to #Pakistan , from Bangladesh to Afghanistan and the world outside, everyone loves a good nice juicy kebab. The chunky, minced meat or melt in your mouth variety, we all of our favourite. Mine is Bihari Kebab and Galauti Kebab. What about you? .
The first kind of “kebab” dates all the way back to 17th century BC in Greece . The skewered meat would be cooked over the fire. These “kebabs” would be known as souvlakis and are still a very popular Greek cuisine. However, the actual word “kebab” is derived from the Persian word “kabap” which means “fry,” but is also synonymous to “burning.” It’s believed this word came from the medieval Persian soldiers that would cook their meat over the fire using their swords as big skewers. .
However what is interesting is to explore the Indian routes of these delicious grilled/fried meats. Vir Sanghvi, author and columnist writes in his article and explores the reference of killing and eating deer meat in Indian mythology, The Mahabharata and the Ramayana. The article further talks about the banquets described in the Mahabharata having countless dishes of mutton, pork, venison and other meats. It becomes further more clear if we read Collen Taylor Sen, Food historian and author of Feasts and Fasts: A history of Food in India, who describes the ancient book Manasolassa, a Sanskrit composition from the 11th century talking about bhaditrakam, a dish made by cutting lamb or goat into small pieces, stringing the pieces on iron skewers and cooking them on hot coals. There recipes of Barbecued Rat, grilled stomach membrane and many more which indeed tells us that neither we were (or are) only vegetables eating population and that we have explored meat like no one’s business. .
As I always say, food has no religion, it just travels and reaches the true food lovers. You got to just eat, talk and document the food stories.

-Cerdo en Salsa Agridulce 🐖.

2kgs chicken nibbles
¼ cup smoky Paprika⠀
1 ½ Tbsp lemon pepper⠀
1 Tbsp Chilli powder⠀
1 Tbsp Garlic powder⠀
1 Tbsp Onion powder⠀
1 tsp Cayenne powder⠀
Mix all of the ingredients in a bowl or use a small blender to smooth out any lumps and set aside.⠀
½ cup brown onion finely chopped⠀
½ celery stick finely chopped⠀
2 garlic cloves minced⠀
2 Tbsp red capsicum finely chopped⠀
1 Tbsp olive oil⠀
900mls of store-bought tomato sauce (Heinz/Watties)⠀
1 cup firmly packed brown sugar⠀
1 cup apple cider vinegar⠀
1 cup apple juice⠀
½ cup honey⠀
2 Tbsp Worcestershire sauce⠀
1 tsp salt⠀
1 tsp ground black pepper⠀
Add oil, onion, garlic, red capsicum and celery to a large pan and sauté until soft and fragrant. Add remaining ingredients and bring to the boil then turn down to a simmer for 30 minutes. Use a stick blender and blend until smooth. For best results leave overnight in a fridge. Use a fine sieve and pour sauce through, catching the onion and celery mix. Use a spatula to work sauce through the sieve into another pan.⠀
The night before or first thing in the morning put nibbles into a large bowl and use a dessert spoon to sprinkle dry rub over the chicken and stir using another spoon to evenly coat all chicken pieces. You should have plenty of rub leftover so store in a jar or container for another time. Set the chicken pieces aside in the fridge covered with cling film.⠀
Remove the kettle lid and arrange the nibbles around the outside perimeter of the kettle and replace the lid. Cook at 250ºC for about 45-50mins. Meanwhile, heat 2 cups of sauce on the stove in a medium pan.⠀
Remove the lid of the kettle and if desired put the pan in the middle of the cooking grill to keep it warm and so you don’t have to hold the pan. Load up the pan using tongs with 4-5 nibbles and turn in the sauce until fully coated.⠀
Return the nibbles to the outside perimeter of the kettle and replace the lid and cook for 10-15 mins or until sauce is set.

The first time I was taught about energy balance (calories ‘in’/calories ‘out’), it was an eureka moment of sorts for me…
In theory, I finally knew exactly what I had to do to lose fat, maintain weight, or build muscle.
By understanding how this concept works, I no longer had to guess!
However, that still doesn’t make the process any less difficult.
Because there are so many factors that come into play when humans are involved.
We aren't machines. We don’t just select an input and receive a desired output…
…If only it were that easy!
While calories "in" vs calories "out" is an oversimplification of sorts, it's still what matters most in order to lose weight.
With that said, different foods affect out bodies in different ways.
Just because you can eat 1200 calories worth of Pop-tarts and stay in a calorie deficit…doesn't necessarily mean that you should.
Ensuring that you provide your body with the proper micronutrients & nutrient-dense foods it needs is very important for overall health & performance.

So the meat department always has a great discount section, but don’t forget to check out the deli section also! Earlier this week I basically bought a bucket of chicken for $4.50. Can’t beat it! It is regularly $8.99, so good deal, 50% off. Always keep an eye on what things normally cost so you can make sure you are getting a good deal. The meat guy at our store told me in house meats are usually marked 25% off, where as the prepackaged meats he can manipulate all he wants. Last summer I found the 10 pre patted hamburger patties for $2.99/pack. I bought 10!!! I froze them and pulled them out all summer. He also told me the ‘cheddar and bacon burgers’ do not sell at our store, so they are marked down ALL THE TIME. From $4.99 to I’ve seen them as low as .99! Just get to know the folks that work at your grocery store...they are trying to get rid of the food, and odds are, they can give you some good tips! Then build your meals around fresh/frozen finds and save some cash! .
