Okay, guys, I don't want to jinx anything, but I think we've had our last snow of the year. <-- Sorry. I've totally jinxed it, haven't I? 😒 I'm still holding out hope for sunshine and spring flowers and warm breezes. The best way, in my opinion, to bring about those feelings are with lemon cookies. For the cookies
1 cup butter room temperature
1 cup powdered sugar
2 cups flour
1 1/2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1/2 teaspoon kosher salt
For the glaze
1/2 cup powdered sugar
1 tablespoon fresh lemon juice
1 tablespoon heavy cream
1 teaspoon lemon zest
For the cookies
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Add the butter and powdered sugar to a mixing bowl and beat until smooth using a mixer.
Add the flour, lemon juice, lemon zest, and salt to the bowl and mix until well combined.
Use a medium cookie scoop to scoop out balls of cookie dough. Place them 2 inches apart on the prepared baking sheet. Lightly flatten the cookies with your hands.
Bake for 10-12 minutes or until the cookies are just golden brown around the edges.
Cool on the pan for 5 minutes before removing to a wire rack to cool completely.
For the glaze
Add all of the ingredients for the glaze to a small mixing bowl and whisk well until smooth.
Spoon the glaze evenly over the cooled cookies.
Let set for 15 minutes or until the glaze has firmed up.
Store tightly covered for up to 5 days.

Okonomiyaki is on the menu today. Hubby wanted this when he got back from London & told me 5 days ago 😂😂😂 #okonomiyaki is a Japanese savory pancake, that’s the best way to describe it since it’s made from a batter & cooked on a hot plate or skillet. There is really nothing like it in the western world. I fill mine with chopped shrimp & sea scallops, and the usual dashi, eggs, chopped cabbage, scallions & grated nagaimo or Japanese starchy yam (must have this or sorry no point in eating it), and then top with thinly sliced pork belly. Anyone who’s been to Japan always comes back saying this was one of the best things they ever ate. There are a few steps in making it homemade but it’s so worth it. There are mixes out there but they don’t even come close. My recipe in the first comments section. ·1 sweet potato
·400g tin chickpea
·400 ml coconut milk
·400g tin tomatoes
·40 g red lentils
·Thumb-size piece fresh ginger, grated
·Handful of young leaf spinach
