I made the bento for the "Evening of Culture" in which a lot of events is going on in the city. It was raining cats and dogs and going from one event to the other was a wet experience. I went home early without eating the lunchbox. .
Purple cauliflower fried with salt and peper - Raw onions - fresh basel - Red grapes - pan fried potatoes - fried squash - fried bacon and onions.
Happy Columbus Day! Holidays = Packed lunches and time with loved ones. Some staples include kimbap, gyeran-mari, and fruit!

This was really useful for me when my son was younger - it's easy to pack and carry as a snack on the go, so I didn't have to worry about finding healthy food for my toddler while we were out. It's a no-mess food so you can eat almost anywhere, and it just as good cold as warm. Also great as a healthy snack for adults!
You can add vegetables to the batter, so it's a very tasty and convenient way to have your children eat their veggies! Other options include raisins, chocolate chips, corn, cheese, carrots, berries, spinach, sweet potatoes, cocoa etc. 🌽🥬🥦🍌🧀🥕🍫🍯 Pick your (or your kids') favourite, and you can vary it each time without changing the basic recipe, to ensure no one gets bored! Sweet or savoury, equally good!
Great for adults too! Pack and take to your office for a healthy mid-afternoon snack with your coffee. ☕️😃 Very well suited for those with dietary restrictions (pregnant women, those trying to lose weight, those with health problems, etc.). As you may have noticed, I often include plain Greek yogurt or skyr in my lunch. Today is no different, but I did not include a picture because I feel that looking at a tub of yogurt appeals only so many times 🙄.
Today's lunch of buckwheat noodles with a creamy miso sauce, vegetables, fruits and a side of yogurt got me thinking about the value of including pre and probiotics in a meal. Did you know that they are both key to supporting a healthy gut microbiome? .
The gut microbiome describes the trillions of microorganisms found in the gastrointestinal tract responsible for numerous functions in the body: .
✅ Protection from infection- the more healthy microbes present, the more difficult it is for dangerous ones to thrive

✅ Producing nutrients via fermentation of dietary fiber

I had every intention of posting more this weekend to breakup the lunchbox posts but yesterday I was hit with a small bug that had now turned into a giant, nasty bug that has me in bed. So, another lunch post, and then I’m going back to sleep.
Today we have:
• Dairy Free quesadilla (we use @daiyafoods for the few times we do fake cheese, she loves the taste 🤷🏻♀️)
• Grape tomatoes
• Roasted corn
• Black beans with green onions
• Grapes as a treat
I took last week off. Sometimes I just have too much going on and I need to take a thing ir two off my plate. Last week, that thing was packing lunches and taking 1 day off from activities. My kids only whined about the school lunches a few times. 🤷♀️🤣 ................. .

I was just talking to another mom today and we were both feeling like our brains were exploding just managing all the mom life things! ⠀
One way that I've made life easier for myself is by making a 12-day rotation menu for Big M and Little m's lunches and snacks. Because now that Big M is a big boy in school....that comes with 2 snacks and a lunch every. single. school day. So many lunches and snacks. Do you hear my pain? 😂 ⠀
I know you want the menu too! I am working on it just as fast as I can possibly work on it! It's going to be flexible, colorful, mostly homemade real foods with a few convenience items thrown in for sanity (and of course you can sub convenience anytime without judgement from me 😘). And of course if my kids won't eat it, it won't be in there.⠀
I'll tell you more when I know more, but if you're as super excited about this as I am, you may be lucky enough to snag a spot in the earlybird rollout version - where you get 1 "day" per week every week until you have them all (and then the full menu in the end). One mom said, she wanted that option because then she wouldn't get overwhelmed with trying new things (I'm with her 💯 , are you?)⠀
And for those of you who want the whole thing at once, you will have that option too!⠀
