So working roughly 50 hours a week has definitely changed my cooking habits BUT I still like to make food that tastes good and is relatively healthy, albeit simpler and quicker to make. This is quinoa pasta with fresh basil pesto (I wish I could have made it myself), stir fried veggies, and fresh greens on the side. Topped with nutritional yeast.
I love my @instantpotofficial. We got home from being out of town and I didn't feel like grocery shopping or eating out. I had frozen meatballs, marinara sauce, and penne pasta so dinner was cooked in 20 minutes.
Google @skinnytaste spaghetti carbonara. You won't be disappointed.
I made *very* few changes from her original recipe.
1) I halved her recipe and all ingredients except I kept the chicken broth volume the same as if I made a whole recipe.
2) I used Pow's Red Lentil Linguini, not necessarily because it's gluten free, but for the added protein and fiber it adds. And regular, thick cut bacon.
3) I found a grated Parmesan/Pecorino Romano blend, so I used 6 Tbsp total. (12 Tbsp if you were making her full recipe)
Macros for 1 serving, as prepped:
33g P • 23g F • 45g C
Higher in fat? Definitely. But you can't live your whole life never eating bacon or cheese. There are certainly ways to lighten this (less bacon, thin cut, turkey vs pork, etc....) if you need to adjust
my favorite meal prep pasta!! Red lentil pasta
Half of one red onion
One red bell pepper
Half of a container of spinach
One container of mushrooms
Half a jar of @raoshomemade marinara
Italian seasoning & salt and pepper
Clean out the fridge primavera. I was sick last week with bronchitis. All the veggies I planned to use sat in the fridge while I ate soup. Feeling a little better and tired of soup, I had to use up the veggies today before they went bad. So chopped a ton - onions, mushrooms, carrots, peppers, bok choy, broccoli, zucchini and tomatoes. Sautéed with garlic in a little EVOO and chicken broth. Then melted a little butter, added some flour and chicken broth (I make a lot of homemade from roasted chicken bones and freeze it), lots of fresh lemon, whole wheat penne pasta and good Parmesan. Added some of the veggies and a healthy, quick, pasta primavera was made. Lots of leftover veggies to use during week in grain bowls, omelettes, etc. Writing the recipe out so stay tuned. Krema bir tencereye koyulur ve kaynama noktasına kadar ısıtılır içerisine çikolata eklenir iyice karıştırılır. Bisküviler bir kaba kırılır üzerine kakao, şeker, çikolata karışımı, eritilmiş tereyağı, süt eklenir güzelce karıştırılır. Antep fıstığı da katılıp tekrar karıştırılır ve ister kalıpla ister streç filme sarılıp şekil verilir buzluğa koyulur. 🍫🍫🍫🍫🍫

This weekend we made EIGHTEEN pounds of dough!! Swipe to see all the kinds of pasta we made! (Rigatoni, fettuccine, spaghetti, bucatini)
It may seem like a lot but it only took us about 4 hours total!! We made the dough in the bread machine and used the kitchen aid to roll out the dough. Super simple! And you only need a couple ingredients. .
Homemade just makes me so happy. We even used homemade olive oil from Portugal!! Lol. .
We let the pasta dry out and then froze it. Had to match up all our tomato sauce we still have in the freezer 😉
Also SUPER DELICIOUS!! We ate the bucatini first!!

5/5 ~ every dish is beautifully plated and have exquisite tastes. I recommend the charred broccoli although it sounds like a simple dish.
These pasta are anything but Italian!!! Still, it's one of my favorite. I bulk my plate with zoodles or pair it with a side of salad.
Cook 2 slices of bacon per person in the skillet
Pour off grease carefully but keep the little bacon bits at the bottom of the skillet
Chop green onions and add half of it to the skillet
Add 2 handfuls of cherry tomatoes per serving, chopped in two
In the meantime, boil a pot of rigatoni or penne
Add salt to the water
When the pasta are ready, add straight to the skillet with a strainer ladle. It's better if you don't drain all the water
Mix everything and add the remaining green onions
Add ¼ cup of cottage cheese to the skillet and mix
Top with a lot of coarse ground black pepper and add the previously cooked and chopped bacon

Made a batch of lentil + mushroom “meat”balls yesterday. 🍄 Haven’t made these in forever, which is dumb because they are so good and super easy to make. 🤗 Ingredients below — full recipe on my blog (just search “lentil mushroom” to find them).💚
8 oz / 1 standard package of sliced mushrooms (I used baby bella) • 1 cup cooked brown lentils • 1/2 cup of gluten-free bread crumbs (can substitute rolled oats) • 1 small white or yellow onion, diced • 1 tsp avocado oil (or olive oil if you prefer), OR a 3-4 tablespoons of vegetable broth for sauteing if you prefer an oil-free option • 1 flax egg (1 tbsp milled flax mixed with 3 tbsp water) • 2-3 garlic cloves, minced • 1 tbsp Tamari • 2 tbsp finely chopped parsley (feel free to add more or use dried) • 1 tsp dried oregano • 1 tsp dried thyme • 1/2 tsp red pepper flakes • salt & pepper to taste. 💚
