Business of the Week is the award winning @ericlyonsltd Most people in the village are familiar with Eric Lyons, a family run business in the village since 1903, but there are some more recent changes that make us keep coming back time and time again!... Not only are Eric Lyons suppliers of high quality meat (and of course your festive dinner – don’t forget to reserve yours!), but also for fine foods and homemade ready meals.
Ever since the refurb last year, Eric Lyons have introduced a dry aging fridge. Not many other butchers have a fridge dedicated to one meat, but the Lyons team have a good reason for having one. The dry aging process breaks down the fibres creating a more tender steak or joint. It also enhances the flavour creating something really unique and special.
The last 12 months has also seen the new hot and cold food takeaway. Eric Lyons now sell sandwiches with bread fresh from Wedges bakery. There’s a hot meal every day such as jacket potatoes with their homemade curries, lasagne with wedges or their very popular mid week roast dinner, All the boxes can be reheated so you can also take them home and have a fresh healthy meal after work. The menu for the week is regularly posted online, so follow Eric Lyons LTD if you want to find out what’s for lunch each week.
Outside catering has also been part of the service for the last few years with BBQ’s and Hog Roasts being very popular. Bookings for 2020 are being taken and most events can be catered for.
We get many questions how we can possibly put meat and sustainability in one sentence. Rightly so! We are excited that more and more people get conscious about the environmental impact of meat.
However, we realise that for some people completely cutting meat out of their diet is not an option. And with The Cut they don't need to.
The key to sustainable meat consumption is consuming less, but better meat. At The Cut we have partnerships with sustainable farmers. You as a consumer will know exactly where your meat comes from.. and can consume the best meat once a week, rather than the worst everyday.
1 kg of steak cut into small strips.
(Strips & Cubes available Instore on order)
In a pot, heat 3 tbsp of butter with 1 full tsp of garlic untill the garlic starts to sizzle.
Add in steak with the following spices:
1 tsp steak and chops spice
1 tsp Portuguese chicken spice
1 tsp Aromat
1 tsp paprika
1 tsp dry parsley
1 tsp garlic and herb spice
Cook untill steak is tender but not completely dry.
Add in 1/4 cup of cream and 1/4 cup of prego sauce.
Sinmer to thicken.
Slice buns or rolls
Spread cream cheese at the bottom, top with shredded lettuce, steak, a drizzle of sour cream, thinly sliced mozzarella and slices of red onion. Spread the top of the bun with mayo and close.
Enjoy with fries or as is.

Some people say that stuffing is the best part of the Christmas Feast 😉 Give your guests a dish to remember with this mouthwatering crispy bacon and onion stuffing tray bake, made with our delicious bacon medallions. 🤤🥓
2 (300 g) brown onions, thinly sliced
½ cup malt vinegar
1/3 cup brown sugar
400 g white sourdough bread, sliced and cut into 2cm pieces
100g butter melted
½ cup chopped flat-leaf parsley, plus extra to serve
300 g Oakpark medallions chopped
½ cup almonds, chopped
1 egg, lightly beaten
1.Preheat oven to 200°C (fan forced). 2.Put the onions, vinegar and sugar in a medium frying pan over high heat. Cook for 15 minutes, stirring occasionally, until golden brown and liquid has been absorbed. Set aside to cool.
3.Put the onion mixture, bread, melted Western Star Spreadable, parsley, bacon, almond and egg in a large baking dish and use your hands or a large spoon to mix to combine.
4.Cook in the oven for 20 minutes, or until golden brown. Serve sprinkled with extra parsley.
5.Serve with roast chicken, pork, lamb or beef, along with some steamed greens or a mixed leaf salad.

PERI PERI CHIKCEN FILLING:
Use for anything and everything !
Perfect for wraps ,toasted sandwiches,rolls ,rotis ,shawarmas etc
500g cubed chicken fillet (Wash and drain)
Marinate in the following spices:
1 Tsp Crushed Garlic
1 Tsp @sujees_masala Peri Peri masala
1 Tsp Salt
1 Tsp Chillie Powder
1 Tsp Crushed Chillies
1 Tsp Jeeru Pwd
1/2 Tsp Tumeric Powder
1/2 Tsp chicken spice
1 Tblsp Lemon Juice
Cook in butter with 1/4 cup water
When it is almost done lower the heat and add in the following sauces :
2 Tblsp Steers Peri Peri
2 Tblsp Steers Tikka
2 Tblsp Tomato Sauce
2 Tblsp Maggie chilli sauce
Leave to simmer on low for 5mins
Cool and add freshly chopped coriander!
