Lunch Jungle Style 🌴! lol. Not quite. But it does reflect the nutritious foods you can prepare with natural ingredients picked from your garden or purchased from local farmers. That’s one of the things I love about being here in #jamaica . There’s so much variety and everyone is happy to share the foods from their farms as it gives them a sense of pride.
Whipped up this raw salad 🥗 and shared with @masterme_infinitenergy after a trek to the river. Let’s just say I have not missed a day of working out since I’ve been here and I love it! My body is being challenged without weights or machines and I feel amazing. Walking up these hills is no joke.
Rooted journey to chips!! I ❤️snacks and especially chips and I am trying to minimize my plastic and packaging purchases at the grocery while maximizing the high vibration and nutrition of what I take in. Plus these are the BEST veggie chips among any that I’ve tried!
1. Pick some good looking colorful organic veggies. Appreciate them:)
2. Slicing them evenly is made much easier with the mandolin (yes I’ve lost the skin of a few knuckles:)
3. I like to marinate root veggies as it seems to pull the starches out to make a crispier and tastier chip. This is the creative part. This time, the red beets got a bbq marinade, the golden beets a tumeric flavoring, the watermelon radish got a sweet and spicy marinade, and the daikon got a spirulina dusting. For the lotus root, I tried dill pickle, vegan cheesy, and wasabi flavorings.

🌱Fresh herb avocado dressing with Cuban style black beans, air-fryer sweet potatoes and tri-colored quinoa (oil-free, gluten-free). Simple delicious foods CAN be the spice of life💚.
🌱Recipe: 🥑Fresh herb avocado dressing: Blend in high until smooth: 1 medium avocado, 3 tbsp tahini, 3 tbsp lemon juice, zest 1 lemon, 1 minced garlic clove, small handful fresh basil leaves, 1 tbsp parsley leaves, 1/4 cup water. Add salt + black pepper to taste.
🌱Recipe black beans: blend 1/2 cup cooked black beans + 1/2 cup cooking liquid (or can liquid/aquafaba) and blend until almost smooth. In saucepan cook 1/2 chopped onion and 2 minced garlic cloves in a little vegetable broth until fragrant and onion is translucent. Add 1 tsp ground cumin, 1/4-1/2 tsp cayenne powder, 1 tbsp dried oregano and cook another minute, adding more broth if becomes too dry. Add blended bean mixture along with 2 additional cups cooked black beans and 1 tbsp apple cider vinegar. Cook for about 10 minutes, adding more vegetable broth or water as needed. Add salt + black pepper to taste. 🌱For sweet potatoes: peel and cut into bite sized pieces. Coat with Braggs Sprinkles herbs and spices seasoning (or your choice of dried herbs and spices and olive oil if desired) and cook in air-fryer about 20 minutes at 400F. (You can also cook in oven on lined baking sheet but cover with aluminum foil for the first 10 minutes so they steam before cooking uncovered.)

I am currently going through a little eczema flare so I know the mineral salts in celery juice will help stripping the membrane of the current higher viral load in my liver responsible for creating those dermatoxins, aka rashes.

Going through a little flare is no fun but as @medicalmedium mentions “It takes time to heal the liver, so give it time and have patience. Healing from eczema is cyclical, meaning it’s normal to have rash cycles on and off as you heal”, he explains.
At this exact time last year, I was at my worst so when I compare, I feel grateful for how far I have come (it is mainly my fingers at the moment that are affected the most).
Keep going, we just have to keep going. 👊🏽

2 tazas de zanahoria 🥕 rallada
1/2 taza de semillas de chia (molidas y remojadas previamente, al menos 2 horas)
2 tazas de pipas de girasol 🌻 activadas
1 taza de brotes 🌱 en este caso yo tenía brotes de fenogreco
½ cucharadita orégano 🌿(si es fresco mejor, claro!)
½ cucharadita albahaca (si te gusta)
Una pizca de sal o agua de mar 🌊(mejor para mi)
Procesas las pipas con la chia y después mezclas todos los demás ingredientes hasta formar una pasta. La estiras sobre un papel vegetal o paraflex y al deshidratador (o al horno bajito bajito bajito) .
Cuanto tiempo??? En el deshidratador de casa fueron 6 horas, quizá debas fijarte como te funciona a vos, lo vas viendo .
Salsa de tomate raw
50 g de tomates secos (remojar dos horas si es con agua fría, si no tenés dos horas le podes dar un toque menos de tiempo usando agua caliente)
1 tomate mediano fresco
1 chorrito de limón
1 dátil también remojado
1 pellizco de cayena
La preparación de la salsita es más fácil porque procesas todo y sale 10 puntos! Lo vas probando y le podes agregar cúrcuma y oliva si es de tu gusto.

Yesterday I was having a conversation with a good friend of mine...the topic of cliche sayings got brought up. A lot of cliche sayings nowadays get put on cute little pictures and get decorated all fancy, but do they really get taken seriously??? The one I want to focus on goes something like this, “if your WHY is strong enough, it doesn’t matter HOW.”
I find a lot of truth within that statement and take it to heart. When we set goals and have ambitions, what’s our reason for doing so? Why do we want to lose weight? Why do we want to get that degree? Why? Why? WHY? If you’re why is weak, you’re follow through actions will be even weaker. Your why is the foundation to the actions you’ll take, and without a strong foundation, the house crumbles. •
Discover your why. Hold it in your mind and heart as you journey through challenging times, because they will come. Stay strong, aim high. If you’re why is strong, you’ll get there. #dontforgettobreathe

What a Wonderful Wednesday,

I can hold the amount of fruits and veggies I used to make this breakfast in one hand. I was surprised by how volumous it came out (ingredients at the bottom) .
I am struggling to find something to quite make up for the milk chocolate I have so regularly, and due to my cocoa allergy, anything I make at home with cocoa I can't eat because it's too dark. And I'm craving some of my regular comfort foods
I am not nearly has hungry /nibbly during the day and not starving when I get home.
I had this bowl for breakfast, but couldn't finish it, along with a smoothie, then I had nuts for lunch with a home made juice (I attempted chocolate mousse, but I couldn't eat it) and I'm not hungry at all. Physically I am ready for more training..
I had a few slices of pineapple for dinner, just to fulfill the habit of eating.
What might be the harder part of the challenge is getting out of the habit of eating at set times, as now I don't need to eat as regularly. That, and getting used to not feeling full. I feel satisfied. I'm not hungry at all, but out of habit I keep wanting to eat more because I'm not stuffed as I would feel after a heavy meal. It's better this way, but it takes some getting used to.
In this bowl:
1/3 English Cucumber
1 small triangular slice watermellon
1 round slice papaya
All diced and mixed, sprinkled with a tablespoon of mixed seeds

Vegan "enchiladas" with sweet potato fries inside 😍 by @bosh.tv.
4 small sweet potatoes
1/2 tbsp cayenne pepper
1/2 tbsp paprika
1/2 tbsp cumin
1/2 tbsp garlic powder
2 red onions
Oil from sun dried tomato jar (1/4 cup)
2 garlic cloves
4 cups cherry tomatoes
1/3 cup sun dried tomatoes
1 tbsp hot chili
1/3 cup tomato purée
3 cups tomato sauce
Splash of liquid smoke
1 can kidney beans, drained
Is it better to eat your vegetables raw or cooked? Well,it’s not that straightforward.
A number of nutrients, like vitamin C, are partially destroyed by cooking. For example, steamed broccoli may have about 10 percent less vitamic C than raw broccoli.
Other nutrients, however, actually become more absorbable after cooking. For example, you end up with more than 6 times the vitamin A in your bloodstream from cooked carrots compared to raw ones.
A study of long-term raw foodists found surprisingly low blood levels of the red antioxidant pigment lycopene.
So, it's not what you eat but what you absorb, and cooked tomatoes appear able to better boost your lycopene levels.
To conclude: there is no evidence to suggest, however, that eating raw foods largely or exclusively is healthier than eating a combination of cooked and raw whole plant foods. #nutrition#rawfood#cookedfood

Rainbow nourish bowl🌱
Sharing one of my favourite meal. It’s super simple to prepare, this bowl filled with baked sweet potatoes, cucumbers, purple cabbages, pea sprouts, carrots, quinoas and stir fry shiitake mushrooms with garlic. Throw them all in a bowl, drizzle with lemon tahini and enjoy.
Recipe: (Serve 2)
1⃣1 cup quinoa, rinse throughly under cool running water and drain. Toast the quinoa in a saucepan, stir constantly to let the water to evaporate. Toast about 2 minutes. Next pour in 2 cups of water and salt. Cover and cook for 15 minutes with low heat. Once cooked remove from the heat. Make sure it’s covered and let it stand for 5 minutes.
2⃣1 medium sweet potatoes, cut into bite sized, drizzle with olive oil, salt and pepper. Bake in a preheated oven until golden and ensure it’s cook through.
3⃣8 to 10 shiitake mushrooms (cut off the hard part from the bottom of the stem). Heat 1 tsp oil and add in the mushrooms. Quick mix with 1 tbsp vegan hoi xin sauce, 1 tsp garlic powder, 1 tsp soy sauce, 1/2 tsp sesame oil and 1/2 tsp white pepper and 1/4 cup water. Cook for about 5 minutes with low heat.
4⃣In the meantime, clean and sliced cucumbers, purple cabbages, carrots and pea sprouts. Arrange all the veggies into your favourite bowl with lemon tahini dressing drizzle onto it.
5️⃣For the sauce, whisk together 4 tbsp tahini, 2 tsp your fav sweetener, 2 tbsp lemon juice, 3 tbsp water, salt and pepper for taste.
