🍚 CURRY COCO 🍚
Une recette simple, prête en maximum 10mins (20 si on prends en compte la cuisson du riz) et pleine de saveur 😍!
Pour 4 personnes :
💫 500grs de blanc de poulet
💫 3 cac de pate de curry jaune
💫 1 oignon
💫 sauce poisson ou sel, ail en poudre
💫 lait de coco

SIMPLE DINNER 🤩🙌🏼!

I had a little nap this afternoon, so when I woke up I needed something simple as to get in ma belly! Behold, veggie rice & bbq tofu to the rescue 🕺🕺🕺
◽️ 1/2 a pack of smoked tofu
Which I fried up then added bbq sauce in at the end to make it all sticky!
◽️ Half a pack of @tildarice mushroom rice
◽️ Mixed peppers
🌱 And then served up with some salad leaves!
Deeeelicious ✨. It’s back to uni again tomorrow, so gearing up for that mentally and also taking a rest day as my bod is a little sore too! 😇

I also roasted some green beans but may or may not have sorta forgotten about them so they were a bit over done 😂🥴 I used my tofu press I got for Christmas and then marinated the tofu chunks over night in bbq sauce and lots of seasoning.
Then baked until crispyyy 🤩
Served with burnt green beans🤣, broccoli and rice (which I like to cook in veg seasoning to add extra flavour)

Tofu satay with sticky coconut rice, stir fried beansprouts and pak choi. A tasty end to a great weekend! We’ve decided on our kitchen paint colour finally (Elephants Breath) and now we have our feet up ready to watch more of Sex Education. It’s so good!
🥜 RECIPE 🥜
Find the firmest tofu you can, I like to use @tofooco ‘naked’ variety. Cube it up and marinate for as long as you can in a mix of peanut butter, red Thai curry paste, soy and coconut milk. I threw in some chilli bean paste too as I’m addicted to it and it basically goes into any Asian dish I try to cook! Once marinated, thread onto soaked wooden skewers and then grill for 15-20 minutes or until just starting to char slightly. To make the dipping sauce mix together 1 tbsp peanut butter, 2 tbsp red Thai curry paste, 2 tbsp soy, 1 tsp fish sauce and a good squirt of sriracha. Add a splash of water to get it to the desired consistency and simmer for a couple of minutes before serving!
Roasted root vegetable curry. Sweet potato, carrot, parsnip and potato roasted in curry spices and coconut oil then added to a spiced coconut broth. Finished with a sprinkling of toasted almonds and chopped coriander leaves.

I like to prepare my lunches every week, it helps save me time and money (there’s a canteen at work which always smells good!!!). Also these lunch boxes are glass so completely microwave safe, dishwasher & oven safe, they don’t stain and they’re not made of gross plastic which smells/stains over time! —————————————————————
In these lunches are: 2x tuna, 2x chicken. Both with 150g spicy Mexican rice & 50g spinach 😋😋
Wok-fried assorted mushrooms and peppers with seasonal vegetables in a spicy tangy sauce🍽️ visited Zen Metro in Birmingham last night for a friend's birthday! Wasn't expecting a runny sauce with this but it was nice as it reminded me of chilli paneer style sauce🧀 pricey for what it was and the rice wasn't included with any of the curries but overall a nice meal for an occasion☺️ they also have a menu specially for vegans!

💙Happy Sunday kiddos! Here’s a super easy curry that turned all of my fridge scraps into deliciousness🤤. I literally just threw carrots, garlic, celery, tomatoes, chickpeas, and spinach together, fried them in a pan with curry powder, salt, and pepper, and then added water and milk to make the sauce. I put it over basmati rice and added a dollop of plain Greek yogurt because WHY NOT 🤪. Usually I would have added chicken but I chose to make it vegetarian this time because a) I didn’t have any meat and was not about to go out in the snow to get some and b) I ate so much chicken last semester, just the though of it makes me want to throw up this morning’s oatmeal 🤷🏼♀️😫

Rice the right way 😍💯 People have asked me how I get my rice just right, perfectly cooked, no water waste, no draining, not undercooked and not over done.
My special way to do this rice is... TIMES the amount of rice you have in grams... by 1.7... and your number remaining is the amount of water In MILLS you need.
For my rice I use 500g of rice with 850mml of water... a full chicken stock cube and 3 star anise, stir all together and cook on medium heat with the lid on for 10 minutes, stir after 5 , make sure the lid stays on all the time apart from that one stir. After 10 minutes remove the pan from the heat but keep the lid on for another 10 minutes, the rice will still cook!
After 10 minutes remove the lid and fluff up with a fork, remove the star anise and add the zest of 2 limes and the juice of only 1!

Salmon, rice, veggies, DONE ✅ lately my meals have been reeeal simple, and I’m very okay with that. This whole dinner took 15 minutes and was crazy satisfying. I used white rice (gasp!!) but honestly it’s easier on my stomach sometimes - @lilsipper has some great research on the benefits of white rice for your gut.
DA GOODS: seared saImon (season with salt + pepper, sear in a hot pan with @chosenfoods avocado oil for 3 minutes per side), fluffy white rice with some ghee, and sautéed broccoli, bell peppers, and carrots. Drizzled it all with @traderjoeslist coconut aminos and call it a day
