I plan this way especially over weekend that I have enough leftovers for next day's school lunch.

Today's lunch. She's headed on a field trip today and had to have a pocket snack available, so she chose a bear paw. (Already in her backpack)

Real second grade lunch. No frills, cookie cutters, or perfect lighting. But you know what? My daughter will LOVE IT. My kids could honestly care less what their lunch looks like.
I read a post the other day that said Halloween in the 80’s was the best and how they wish it was still that way. I was born in the late 80’s and grew up in the 90’s but I feel the same way! No comparing, no filters, no “likes”. Not just about Halloween, but about everything!
My mom hardly ever packed my lunch. So for my kids I pack pretty much every single day of the school year. And sometimes just knowing my kids will be happy and fed is all that’s needed. #realtalk
I had to head out yesterday on a business trip. I always like to leave the first lunch of my trip pre-packed, especially when I’m gone on a Monday. The routine is already out of whack, so having one thing prepped helps the morning go a little smoother. (I’m not really sure why I don’t meal prep when I’m home. Would probably help our regular mornings too 🤷♀️.) Egg salad sandwich 🥪, Veggie sticks, Persian cucumbers 🥒 , raspberries, mini M&Ms for dessert (I’m positive these are gone first😉)!
Who else is exhausted and have no groceries? 🙋🏻♀️🙋🏻♀️ We got back last night from a 4 day weekend in Orlando and I had to make do with what we had. Y'all already know what is on my to do list today-grocery store!

After the Zoo yesterday we were all so tired that nobody wanted to make dinner. So pizza it was... And that means leftovers!! The best thing in a tired Monday.

Lunch packing can be a struggle. So many lunches I pack come home uneaten, partially eaten...filled with wrappers from the lunch line or other kids 😲 i find its more challenging to get mars to make good choices at school for so many reasons, first the lunch line...i mean, need i say more? Whether its comments from other kids or the smorgasboard of "food like" choices offered at school...its tough. Parents of school aged kids, I'm here to tell you...i feel your pain. Its like all the sudden my not picky eater gets super picky, it can't smell too much🤔cant look too crazy, etc. But we have finally come to a nice middle ground. Giving in a bit and letting her have the cauliflower puffs that look like Cheetos...etc has really gone a long way to get her eating what is packed and out of the lunch line!
So what's in her box today? Romaine salad with smoked salmon, carrots, mini peppers, grape tomatoes, cukes, kalamata olives and a side of #primalkitchen avocado ranch. #veganrobs cauliflower puffs, some carnival grapes and a clementine.
So here's to you parents out there struggling with lunchline!💪

HOW PREPARE POTATO GRITS BANANA PUFF in just 8mins
1)Pour warm water in a clean bowl, add a tea spoon of sugar, little salt and baking powder (stir well) , cover and allow to sit for a while.
2) Open the mixture, add your potato grits , mashed ripe bananas
3) mix in all ingredients well
, add a little more water to get the desired fluffy batter
4) Deep fry.. In batches.
This is particularly loved by my kids cause of its sweetness and tenderness.. Very easy and quick.. Add a bit of pepper if you want it hot.. You can substitute the potato grits with all purpose flour but take note that if it is not CHOW POTATO GRITS BANANA PUFF

Today’s rainy day #Yumbox lunch: leftovers from Sunday dinner - big fat udon noodles sautéed with garlic, ginger, minced pork, spinach and peas. This morning I reheated the noodles quickly & packed them in Yumbox Zuppa. On a side in MiniSnack a medley of fresh fruit & veggies and few crunchy pistachios. The Yumbox Zuppa silicone band is saving us lots of forgotten utensils - so easy to put the spoon back where it belongs (super important when you have a little space cadet living with you 😉).
They are full with nutrients, made with super food and whole food, high in protein, healthy carbs, fats, and fiber, which helps build lean muscle mass, boost energy and aid weight maintenance. Essentially, they are simply the guilt-free, energy hit and the perfect snack!

Which lunch would be a winner in your house? I’ve been sharing some of the lunches I make day to day hoping it gives you a few ideas. Here’s what’s in each lunch😋
1. Salami, crackers, pepperoni, cucumbers, apples, blueberries, olives, tomatoes and pomegranate seeds.
2. Cucumber cream cheese + vegan whipped cream cheese sandwiches, edamame and more cucumbers (I use 1/2 in the sandwich and 1/2 here💚), dye free O’s, peaches + witches finger grapes and jujubes.
3. Bagel bites with olive tapenade + whipped cream cheese, blueberries + apple, plantain chips and apples.
4. Pumpkin waffles, pumpkin butter + vegan whipped cream cheese, apples with raisins and lemon juice, leaf cookies and maple roast seeds.
5. Banana dog bites made with sun-butter, cucumbers, crackers, grapes and goji berries.
I try to use a few foods in different ways each week to keep lunch simple, but still as fun and varied as possible! Love fall and all the amazing flavors🎃🍎🍁

Last week we had a bunch of overly ripe bananas, since we try our very best to avoid food wastage- I decided to whip up some easy chocolate chip banana bread. They turned out so delicious and knowing we didn’t waste any food made it even better!
There’s so many ways to use produce that are looking sad and approaching the end of their life. It’s extremely important that every household tries their very best to avoid food wastage... I assure you, you’ll feel so much better knowing that you haven’t!
