I'm also still working 50 hours as a fresh produce manager, renovating my home all while spending late nights working on bringing premium products to fellow Aussies. ▪15-20 chestnut mushrooms
▪4 tbsp plain flour
▪1 cup panko breadcrumbs
▪1.5 tsp garlic granules
▪1/2 tsp onion granules
▪1 tsp dried mixed herbs
▪1 tsp smoked paprika
▪1/4 tsp salt
▪1/2 cup chickpea/gram flour
▪1/2 cup plant milk
▪2 cups neutral flavoured oil
▪1/3 cup vegan mayonnaise
▪2 tbsp finely chopped fresh chive
▪Juice of half a lemon
▪Salt and pepper to taste
1. Place the oil in a small saucepan on medium heat - you want it to fill about 1/3 of the saucepan.
2. Get three bowls and in one place plain flour.
In another place the chickpea flour and plant milk and whisk until smooth.
In the last place the breadcrumbs, garlic, onion, herbs, paprika and salt. Mix well.
3. Gently brush your mushrooms with a paper towel to remove any dirt.
4. Place the mushrooms into the flour and coat well. Then dip into the wet mix, then the breadcrumb mix and then place onto a plate. Make sure you coat all layers well and the mushroom is completely covered. You may want to use one hand for the dry and the other for the wet or a fork to transfer so you don't get too messy!

How about a bowl of chocolate maca smoothie topped with crumbled chocolate pecan nut bar? 😁 Yay or nay? And did I tell you about my little vitamix incident from a few weeks ago? 💥I was throwing in ingredients for my favourite peanut butter maca smoothie in the jug and somehow, don’t ask me how 😁 I left a tablespoon in there 🥄 and yes I switched the blender on 😅 on 20 (max) as I always do... after turning the power on things escalated rather quickly 😂 The jug exploded and the spoon flew out and hit me in the stomach but it did’t make a whole in it 😂 not to mention the peanut butter smoothie which ended up splattered EVERYWHERE. The engine is absolutely fine, my new jug finally arrived and my vitamix is working like brand new but in case you were wondering. Blending spoons sadly is not covered by warranty 😂 So don’t do this at home kids 🤪 So yes vitamix is pretty powerful but I would be even more impressed if it actually managed to blend the spoon 😁

I have to say, making smoothies is one of the highlights of my day. The possibilities are endless and they almost always turn out delicious.
This smoothie is filled with carrots, strawberries, a bunch of blueberries, and greens 🥬. I use coconut water 🥥 in most of my smoothies, but you can use regular water or none at all! I heard somewhere that ideally you will have as many, if not more, vegetables than fruit in your smoothie. It gives you more vitamins and not as many sugars. Just mix everything in your blender or food processor. Then top it with whatever your heart desires. Coconut chips, frozen bluebs, kiwi berries , sugar stars, raspberries and the very last crumbs of my granola.
