This soup is a firm family favourite in our house & as it's been getting a little chilly in the evenings along with the sweetcorn season coming to an end, up here in Northland at least, it's time to stock up on the sweet taste of summer for the cooler months to follow
In this recipe I've utilised the cobs in a quick stock that becomes the soup as I'm a big fan of no food waste & there is still plenty of flavour in those cobs! Along with the fresh flavour of lemongrass, and the immune supporting, antioxidants and anti-inflammatory properties of turmeric and ginger it's the perfect soup for the change of seasons or to have at the ready for cold season when you need a lift

In a large dutch oven or soup pot, heat oil over medium-high heat.
Add carrots, celery and onion and cook until onion is translucent, about 5 minutes, stirring often.
Add broth, chicken breasts (raw and whole), barley, salt and pepper.
Bring to a simmer, cover and reduce heat to medium-low. Cook, stirring occasionally, until barley is tender, about 45-60 minutes.
Remove chicken from pot and shred with two forks. Add back into soup, taste, and adjust salt and pepper to your preferences.

This new and improved loaded baked potato soup is the soup of my dreams. Easy, creamy, cheesy, hearty, and so comforting. Love, love it. Get some potatoes in the oven or Instant Pot RIGHT NOW so you can eat this soup for dinner (or lunch!!!). And then maybe invite me over; it’s leftover/run-around-like-crazy-night here.🤪

This big steaming cozy bowl of pork noodle soup with simmered vegetables + kimchi is made super flavorful from @bibigousa’s hot & sweet gochujang sauce. #ad@Bibigousa’s gochujang sauce offers an accessible rich taste of Korean cuisine in convenient packages. This is not a one-note hot sauce--it lends an addictive spicy, savory depth and slight sweetness that makes the sauce great for stir-fries, dips and spreads. Here’s an easy mouth-watering recipe for you (serves 2)
In a wok or cast iron pan on med-high heat, stir-fry minced ginger, garlic + scallion whites in some oil until fragrant. Add in ½ lb. ground pork and 2-3 Tbsp @bibigousa gochujang sauce (adjust amount for your spiciness preference). Cook + toss everything for about 2-3 min until the pork is cooked through. Remove pan from heat and keep warm. Meanwhile, cook noodles of your choice according to package directions. In a saucepan, heat up a quart of store-bought or homemade chicken broth until boiling, season with a touch of salt or soy sauce, and simmer your choice of veggies for a couple minutes. I used a mix of yu-choy and enoki mushrooms here. Divide noodles between bowls and top with @bibigousa gochujang sauce + pork mixture, simmered veg and kimchi. Ladle the boiling hot broth into the bowls, quickly top with toasted sesame seeds, sesame oil, scallion greens and a raw yolk (optional) for added creaminess. Serve immediately with a couple cloves of raw crushed garlic, more kimchi and @bibigousa gochujang sauce at the table for dipping/flavor adjustments.
Don’t be alarmed by the dark color of the gochujang sauce! It is 100% natural + normal. The sauce is heavily pigmented by the gochugaru (Korean red chili pepper)--not artificial food coloring. When mixed into a stir-fry, broth, dips or spreads, the deep appetizing red color reminiscent of gochujang comes to life. Currently chowing down on this high-protein, plant-based Lasagna Soup made with @eatbanza chickpea noodles! 🥣
Warm, cozy bowls like this help power me through a long day 🥵 Does anyone else always need a hearty lunch to get them through? The best part about meal prepping soup is that you have 4-5 meals ready to go, all from just one pot 🙌🏼 This recipe is tweaked from @balancedbysarah’s lasagna soup 💛
🥣Vegetarian Lasagna Soup:
1 tbsp avocado oil
1/2 cup diced onion
2 large carrots, chopped
2 stalks of celery, chopped
One 28 oz can crushed tomatoes (I used @muirglen organic crushed tomatoes with basil)
2 tsp Italian seasoning
1 tsp turmeric (optional but great anti-inflammatory benefits)
Salt and pepper
4 cups low sodium chicken broth (can sub for vegetable stock for vegan)
1 box of @eatbanza chickpea lasagna noodles, broken into about 3 pieces each
3 packed cups of chopped kale, stems removed
In a large pot, heat the oil on medium, then add carrots, onion and celery and stir to coat. Cook for 5 minutes, then stir in crushed tomatoes, seasoning, and broth. Bring to a simmer, stir in noodles that you break up first, then cook for at least 5 minutes — until carrots/noodles are fork tender. Add the chopped kale, stir and cook for 5 more minutes, until wilted. Garnish with fresh basil. #healthbyshortstack
