Sometimes I want meals with all of the flavour, cheese, etc. and other times I crave very simple meals like this one with sweet potato, zucchini, carrots and eggs (of course I added siracha too 😉). It’s all about balance, enjoying everything in moderation and listening to what your body needs 👌🏻

For the potatoes:
4 medium sweet potatoes
3 Tbsp butter
Salt and pepper to taste
1 tsp cinnamon (sounds interesting, but take a leap and trust me)
For the base:
1 lb ground beef
1 small onion chopped
2 cups frozen veggies
1 cup beef gravy
We can usually get leftovers for a big meal like this to last for at least 3 days. This barely made it to day 2. 😜

These Sweet Potato Empanadas with Minced Tempeh are probably my favorite variation of a childhood classic. I talk about these pockets of happiness and provide detailed steps about making them in my blog post, which you can find here or linked in my profile. https://bit.ly/2R5LLLK
The recipe for the tempeh filling is below in case you want to just make that and pair with a steaming bowl of rice. 🤤
1 block tempeh
2 tsp tomato paste
4 white button mushrooms, diced
2 tbsp canned green chilies (optional)
1 tsp maple syrup
1 tbsp soy sauce
1 tsp onion powder
1 tsp dry basil
2 tsp smoked paprika
1/2 tsp cumin
1 tbsp apple cider vinegar
1/2 cup water
Salt to taste
In a pan on medium heat, add onion and mushrooms and sauté until moisture cooks off and onions soften. Crumble tempeh into the pan with your hands then add tomato paste, spices, soy sauce and maple syrup to the pan. Stir to combine and allow to become fragrant, about 3 minutes. Add water and green chilies and stir to combine. Then reduce heat to low and cover with lid. Allow to cook for 10 minutes with the lid on. Remove lid and cook off any excess moisture then remove from heat. Add apple cider vinegar, stir and add salt to taste. Set aside for empanadas or use as main protein for a bowl.
