Recovering from the worst food poisoning I’ve ever had and feeling so thankful that it happened after part 1 of #quekywattobaby ’s birthday celebrations and that I should be back to normal for her actual birthday and part 2 of her birthday celebrations in KL! Whew! 😅

Here we are scalding the curd for our table cheese. Scalding is a process where you bring the temperature of your curd up for a period of time which helps expel more moisture from the curd, firms them up and increases acidity. This increases the resiliance of the curd.
In this example we have scalded the curd by adding boiling water to bring it up to then maintain the temperature. You know your curds are ready when they have changed texture to be more stretchy and stringy.

One of the easiest ways to check the set of your curd is by cutting a slit in the centre of your curd and using your knife to press it apart to test it. What you are looking for is for the curd to push apart cleanly exposing the whey beneath.
This is a much more acurate way to test your set as the setting time of your curd can vary depending on factors such as the temperature of your make day and the compostition of your milk.

Excited to share that I recently started studying for my permaculture design certificate! - something I’ve always wanted to do 🤗
Whilst it is challenging, it has been everything I’ve wanted to learn and more. I’m excited to be learning ways to better utilise and design our land for self sufficiency whilst honouring our earth and what we have been given. I can’t wait to apply these skills to our little #wildlandhouse . It has always been a dream of @tommidelicious and I to turn our property into an example of how lawns can be better utilised as beautiful food-producing lands & to inspire others to do so too.

This little darlin’ Scottish Highland coo was born at @thefarmatbyronbay when I was last there, and it was the absolute cutest thing ever watching this total cute-nut trying to help Mr Chicken out of the trough. The poor chicken had got itself stuck and couldn't work its way out. Lil Coo just kept trying to nuzzle Mr Chicken out. It was the sweetest thing to watch (in the end though some random punter had to jump the fence and take Mr Chicken out with his own hands because despite Lil Coo's best attempts, the poor chicky wasn't going anywhere!).
