This is what my dinner usually looks like.. Colorful, balanced and full of plant foods!
I always like to make sure i’ve got a balance of carbs, fats and protein, along with colorful veggies/herbs to hit my micronutrients.
Carbs - mix of quinoa and brown rice
Fats - cashew and peanuts
Protein - Tofu
Broccoli, Cabbage, coriander, parsnip, miso, lime, garlic
I always tend to pan fry my tofu the same way. Sesame oil, garlic, tamari and thyme. Tofu will absorb anything you season it with like a sponge!
Red cabbage - I massage it with my hands in some salt and apple cider vinegar and a tsp of sweetener. It shrinks so you get more volume and tastes delicious!
Dressings are what makes or breaks your dish. I made a peanut miso dressing for this which was 😍
Dont know the exact measurements but I used peanut butter, miso, lime, sweetener, garlic and some chilli :)
This meal didnt take more than 20-30 mins to prepare and I usually cook in bulk to half the time too.
Make time for your health and fuel yourself with nutritious food! This was not only super healthy but one of my tastiest dishes!

My apologies for being so quiet lately (minus my Insta stories yesterday!) Sometimes you just need to take a step back and work on you. I'm a work in progress, we all are! But sometimes we have to take care of ourselves before taking care of others. Nothing is necessarily wrong but things can build up and become too much after time. I guess that's life!

There is nowhere better than Homesense for alllll the autumnal candles. I picked this up a few weeks ago and I’ve been putting off lighting it (anyone else hold out for as long as possible? 😂) but I can’t resist anymore. Bijna iedereen kent Thomas en zijn vriendjes wel, voor sommigen is het zelfs een beetje jeugdsentiment! Daan is helemaal gek van treinen, dus de nieuwe bioscoop film moesten wij natuurlijk zien! Voor het eerst naar de gewone bioscoop en geen peuterochtend, maar wat heeft hij genoten!

What to expect? Behind-the-scenes photos, sketches, unique props, anecdotes that once again illustrate both Kubrick’s brilliance and obsessive eye for detail, annotated scripts, his astonishing amount of research materials that indeed have been materialised in one of his iconic films or sadly never saw the light of day, and so much more.
Considering its location, the emphasis obviously lies on the design aspect, from set design to the most minute detail. Take the famous line “All work and no play makes Jack a dull boy” which Jack Nicholson’s character in The Shining types over and over again on a huge stack of paper. Now, you know with Kubrick, he didn’t only have that written on the top page of the stack. No, Mr Perfectionist would of course have aaaall the sheets of paper covered with it. But what I didn’t realise was that he would have the line translated and typed all over again for a number of different languages so it wouldn’t lose its impact in translation! Rather than a literal translation, it would be an interpretation suitable for the country. You can see the German and French text typed on the yellow stack of sheets in one of these photos.
This is probably your last chance in a while to see such a high-quality and encompassing show dedicated to one of the most celebrated film directors of our time. Make sure you don’t miss it!

This is a definite improvement in my mental health and confidence in my physical ability & concentration.
I loved cooking and trying out new recipes but it all became a chore physically and mentally.
One bad relapse I took of my Multiple Sclerosis summer of 2017 caused me to lose the power & mobility in my right completely for a number of months.
Function did return after a dose of IV steroids & the inflammation on the brain damping down ... but it was not restored fully.
That’s the joys of hidden disability anyone looking at me would think I am fine,
I work hard to disguise it and work around my lack of function and constant neuralgia.
Even the simplest of tasks I go to do it feels like I have a brick attached to my elbow and am wearing boxing gloves.
Marty has been great and taken over the majority of household chores.
I appreciate that greatly but sometimes you just want to think and do for yourself 😂
In recent months my mental health was an additional barrier .. most days I didnt leave the house was avoiding places like supermarkets
I also lacked the concentration and cognitive function to follow a recipe even if I had the ingredients or energy required to cook 👩🍳
So unlike me, as my scientific brain loves recipes ... they are like an experiment 🧪
But I am slowing getting the enthusiasm back by slow cooking - simple ingredients cuts of meat, minimal preparation and no need to lift heavy pots or pans, drain anything, check the oven or work out & keep track on timings - it’s all just bung in the pot and go.
I even been using lazy garlic and ginger to cut out that step and we prepped the peppers & onions last night so I could just bung it all in today.
And a bag of M&S microwave rice was all we needed tonight.
One pot no stress and happy tummies.?

Overnight oats soaked in African Roibos Tea, half a grated apple, half a grated courgette, maca, cinnamon - slightly warmed up in my @thermomix_malta (5 minutes at 45'C). 👌 Topped with homemade almond & cashew butter, sliced apple, a dollop of @coyo_uk and the easiest and healthiest chocolate sauce evaaaa 😍😍 Choc sauce is basically 1 teaspoon raw cacao powder from @hamessensi, 1 teaspoon carob powder and 2 tablespoons oat milk👌🤤🤤 Quick, Easy and Nourishing -- what more could you possibly want 😉?

I really notice the difference in eating cooked foods and raw foods. My diet consists of about 90 percent raw food and has been for the past 3 years! Heres what I've noticed...
👉 With cooked foods I always want more. After a meal I'm never quite satisfied!
👉 My energy levels are much lower with cooked foods
👉 Raw food is quick and easy!
👉 When combining raw foods properly my digestion is SO much better. I feel lighter and everything feels better
👉 Eating raw food is not only physically detoxifying, but also emotionally too! I often seek comfort in cooked foods, it's hard to do that with raw foods so you're kinda left to deal with what's really going on. It's easy to emotionally eat and each out for a heavy carby cooked meal!
