18 medjool dates, pitted
1/2 cup almond butter
1/4 warm water
1 1/4 cup oat flour
1/2 cup almond flour
1/4 cup coconut sugar
1/2 tsp salt
1/3 cup cacao nibs
10 ounces vegan dark chocolate
1 tbsp coconut oil
Flakey sea salt
1. If you do not have oat flour and only have rolled oats, place the rolled oats in a high speed blender and pulse until a flour is created. Pour the oat flour into a bowl.
2. Add the salt, almond flour and coconut sugar to the oat flour and mix.
3. In a high-speed blender combine pitted medjool dates, warm water and almond butter. Blend until smooth! If the mixture is not combining well you can add more warm water.
4. Scoop the mixture out of the blender into the bowl of dry ingredients and mix with a wooden spoon until a cookie dough mixture is formed. Add in cacao nibs and mix again. You could use your hands to better combine the ingredients to make the dough!
5. Put the dough in the fridge for 15 minutes to let chill.
6. Meanwhile melt chocolate. Either in a double boiler or microwave (if microwaved do 15 second intervals, mixing in between until melted completely. Once melted add 1 tbsp coconut oil and mix into chocolate until.
7. Line a large baking sheet or plate with parchment pepper.
8. Form the chilled dough into balls then dip into the melted chocolate and using two fork lift the truffle out of the melted chocolate letting all the excess chocolate drip. Carefully place it onto the baking sheet lined with parchment paper and repeat this step until each truffle is covered in chocolate. Top off with flakey sea salt!
9. Place the truffles in the freezer for 30 minutes to let chocolate harden and enjoy! I like to store the remaining in the freezer And enjoy throughout the week / month. •

Sesame garlic tofu with baby bok choy. If you want to use a honey substitute for a vegan version you can. Some vegans eat honey, some don’t so it’s up to you! 2020 marks the 10th year I've been #plantbased (mostly vegan). What I usually make at home is often too crude & too lazy to look good in pictures (I cook because I have to, not because I enjoy it), soooo . . . instead, I'm sharing what I eat when I'm out.
One of my staples along Katipunan Avenue is at 3F Regis Center. Look for POKE/POKE at the "cafeteria" & order the "Nutty Tofu" bowl -- fried tofu, lettuce, onions, & creamy peanut sauce, w/c you can get with brown rice or as a salad. Today it's my early lunch after teaching #Pilates at White Space.
It's been waaaaay too long since we had this beauty! 🥣 .
Tuesday's lunch special is not one you want to miss - or wait too late in the day for - it is sure to go quickly! Pesto pasta is made with a creamy pesto and avocado sauce, onion, garlic and cherry tomatoes, and it's sure to make Tuesday more enjoyable. ❤

Tofu & Black Bean Chilli by @nourishingalex ♥️ Served with rice and avocado for a delicious and comforting meal! Get the recipe:
- 1 small brown onion, diced
- 2 cloves garlic, minced (or 2tsp garlic powder)
- 2tsp ground cumin
- 2tsp smoked paprika
- 1-2tsp chilli powder (depending on how hot you like it)
- 1tsp dried oregano
- 1/2 block firm tofu, drained & pressed excess liquid out
- 400g can black beans, drained & rinsed
- 400g can chopped tomatoes
- 1 heaped tbsp tomato purée
- 1tbsp maple syrup (to balance the acidity of the tomatoes)
- 400ml water (I just fill up the can of chopped tomatoes with water)
- veg stock cube
- salt & pepper to taste
1. Sauté the onion & garlic on a medium heat setting in a large saucepan with a little water or oil for around 10 mins until the onion is translucent.
2. Add in the tofu by scrambling it up using your hands, then add all the spices, stir frequently and cook for another 5 minutes until fragrant.
3. Pour in the chopped tomatoes, black beans, tomato purée & maple syrup, give everything a good stir, then pour in the water and veggie stock cube.
4. Bring everything to boil, then once it starts to bubble, turn the heat down to low and simmer for 30 mins until the sauce has reduced and has thickened.
5. Serve with rice, veggies and avocado! 😋 (I like to top with nutritional yeast too)!! Enjoy!

✨ Marmita 100% vegana, dia 1: hoje selecionei um arroz branco + legumes, proteína de soja + legumes, uma saladinha, e algumas frutas.
Antes de preparar o resto da comida e se você quiser os legumes assados, você vai precisar de uma forma que vá ao forno, coloque os legumes (cenoura, batata, etc) fatiados, coloque bastante azeite, sal, e o tempero que quiser, enquanto tudo isso assa você pode ir fazendo o resto: ✨
— 🍚 Como fazer o arroz branco: (Apesar de ser fácil vou ensinar do mesmo jeito ksks) Em uma panela coloque água uma xícara de arroz (pode ser arroz integral tbm) coloque um fio de azeite, meia colher de sal e água até cobrir tudo, espere secar e pronto.
— 🥗 Como preparar a salada: (Você vai selecionar o que quiser ou o que tiver na sua casa, no meu caso usei só que tinha mesmo) Cortei couve crua em tirinhas, adicionei algumas folhas de alface e coloquei também um tomatinho, sal e azeite ou se você preferir pode fazer um molho de salada.
— 🍛 Como fazer a proteína de soja texturizada: Vamos ao nosso prato principal, em uma panelinha coloque água para ferver, quando estiver quente o suficiente coloque uma xícara de proteína de soja e molho shoyu, deixe descansando por 2 minutinhos, passando esse tempo você pode ir refogando alho e cebola em outra panela, pegue a soja e retire toda a água, coloque junto do alho e da cebola, coloque o tempero que você quiser, eu não tinha curry nem nada disso então coloquei pimenta do reino, cebolinha picada e pimentinha colorida pra ficar tudo bonito, deixa a soja pegar o gostinho de todos os ingredientes e pode colocar molho de tomate. — 🍎 As frutas: quem é vegetariano/vegano sabe da importância das frutas e que devemos consumir todos os dias, coloquei laranja e maçã, mas você pode colocar qualquer fruta a escolha é sua.

Gluten free Chimney Cone 😍😍😍
The entire time we were in Prague people kept walking past us with these incredible looking cakes cones full of ice cream and I felt the usual bit of envy that it was something else that I couldn’t eat! After three days of almost mugging people for their chimney cones @e19_erl did a spot of googling and found out that @goodfoodoriginal did a gluten free chimney cone at a little extra cost! 🍦
On ordering I was told it was considered ‘low gluten’ as they couldn’t guarantee it would be safe from cross contamination but they made it in front of me and they kept it separate from the others which I found really reassuring. It took a little longer to make, (okay a lot longer - around fifteen minutes!) but it was well worth it to join in and feel like a normal human being after six years of drooling over similar delicious sweet treats I can’t eat! 😋😋😋

In my last post I spoke about how I’ve kind of accepted that for the time being I’m happy with eating a vegetarian diet while I’m away out of necessity and then doing my best to avoid all animal products at home - I haven’t really seen any dairy free alternatives in restaurants (although supermarkets is a different story) whereas I’ve been pleasantly surprised at the amount of gluten free options! 💜

Where I am physically: at work, almost kindaaaa done with the 94 hours worked over the past 10 days .
Where I am mentally: on my couch, in my men’s bear pajamas, eating a giant bowl of chocolate oatmeal and not moving till I feel like it😫 soon steph soon, until then I’ll cuddle the worlds cutest baby and try to smile through the next 12 hours .
Oats: soak 1/2 cup oats and some chia seeds in just enough water to cover overnight (can skip this step but it helps the starches dissolve and makes it so creamy and easier on the tum!), then add to a pot with milk of choice (I did coconut). Cook over medium heat, stirring often. When done add 1/2 serving chocolate @nuzest_usa , some cacao powder, sea salt, and maca powder if you have it. I topped mine with @eatwannadate chocolate date spread, crunchy almond butter, and bananerrrr

Mugcake chocolat 🍫
Pour 2 petites tasses ou un mug normal :
- 50g de compote
- 20g de farine
- 2 c.à.c de sucre roux
- 1 c.à.c de levure
- 10g de margarine végétale
- 20g de chocolat noir fondu
Mélanger l’ensemble des ingrédients et repartir dans les mugs au 3/4.
Cuisson : 1min au micro-onde à puissance maximale

Air fryer breaded tofu with fluffy coconut rice & beans🥥🍚
Vegan, gluten free & oil free!
This was apart of my omad for the day. I also had some strawberries & a banana. I fast 23/1 with extended 36/48/72 🌱
Ingredients for coconut rice:
3/4 cup jasmine rice I use @lundbergfarms
1 cup coconut milk
Add the ingredients to the pot, bring to a boil, cover and let simmer for 45-50 minutes
Ingredients for breaded tofu:
1 block extra firm tofu I use @soyboytofu
2 tbsp tamari
1/2 cup gf breadcrumbs
Press tofu. Once pressed cut tofu into slabs and line them in a dish. Put tamari in the dish & let tofu soak in it. Once tofu marinaded in tamari, coat with breadcrumbs.
Air fry at 400° for about 15 minutes flipping halfway.
I store everything in the fridge separately in meal prep containers.
