Initially a little reticent and shy. But with an hour it rounded out and showed some good weight in the mid palette with decent length, grip and acidity. Very good.

I am always left thinking how do they do it. I’m fast coming to the view that taking their time and doing it thoroughly may well be the key thing. With extended lees contact and longer aging, protecting the wine from oxidisation. Or is it the work in the vineyard? That dedication that makes it hard to make an appointment could also be a key differentiator.

Chef Andrew Russell (ex MONA) nailed the brief of creating a stunning Menu for each wine.

Isn’t it strange that you have to worry about #premox with any white Burgundy when it’s older than 3 years? And like often before this quite old villages wine is not only stable but offers a complexity & character which you‘d never expect. I pulled the cork nearly in one piece & then the firework of aroma started. Absolutely stunning flint stone, very clean, of course hazelnut but by no means sherry like oxidation. At first the taste was slightly straight, not much weight, a bit like cold steel but with air it blossomed, gained body & showed even a decent sweetness, it went well with comté, brillant-savarin 🧀 Italian salami & rillettes d’oie. Que tú prefieras una denominación de origen a otras, no quiere decir que esas sean peores.
Puede que te inclines hacia unas variedades en concreto, pero no necesariamente ha de coincidir con el gusto de los demás.
Lo que para ti es moda, para mí puede estar desfasado o lo que para mí es vanguardista, a ti te puede parecer obsoleto.
Respeto absolutamente todos los tipos de vino por el trabajo de todas las personas que hay detrás de ellos.
En mi perfil de Instagram vais a encontrar los vinos que a mí me gustan, que yo bebo y comparto. Es mi opinión. No soy periodista ni crítica vinícola (no me creo periodista por escribir 8 frases a pié de una foto). No abandero ni represento a nadie. Es mi simple opinión en una red social.
Podemos no coincidir en criterio, en gustos, en maneras de expresarnos o de hablar sobre el vino. Me encanta cuando alguien me da su opinión porque quizás es una visión que yo no había apreciado. Acepto todas las críticas siempre que sean constructivas y con respeto. No queramos imponer nuestro criterio personal. ¡¡PARA GUSTOS... LOS VINOS!!
