Tonight we had Pistachio-Mint Beef Koftas for dinner with a Tomato-Herb Sumac Salad. Both recipes are from the cookbook Milk Street @177milkstreet by @cpkimball for the #rainydaybitescookbookclub .
We have koftas or keftas regularly and my son was very excited to learn they would be dinner tonight. That is why I used 2 lbs of burger instead of 1 1/2 lbs like the recipe called for. 😉
I didn't use the food processor for the beef mixture, my hands worked just fine and was less clean up. Used fresh mint with the mortor & pestle ground pistachios instead of dried & loved how it worked together when mixed. One egg was enough to bind everything together. Served with warm naan bread, the yogurt sauce and chopped lettuce it was a delicious arrary of flavours and textures. The Tomato-Herb Sumac Salad turned out to be the perfect side dish to this meal!🍅🥗
